What I hate about making cupcakes is having to scrape and scrub the muffin tin afterwards. Removing the caked on batter hurts my arm and ruins my nails. So I developed a system: I cover the muffin tin tightly with aluminum foil.

Ever since I saw this muffin top pan ($19.95) on Serious Eats the other day, I can't seem to get it out of my head. If there is only one recipe you try from this website, I suggest you make these molten chocolate cakes. The recipe is incredibly simple; a novice cook could make it successfully. I've made them several times at dinner parties, and they always get rave reviews.
