So far we've had a pretty varied week: Monday was President's Day, Tuesday was National Pancake Day, yesterday was Ash Wednesday, and the day you've all been waiting for is finally here: today, Thursday February 22, is National Margarita Day!!!! I know both my mom and geeksugar (big time margarita drinkers) will be ecstatically celebrating this afternoon once happy hour arrives. Since it's almost the weekend, I say we follow their lead and stir/blend ourselves up some good old margs! You can make the classic Ultimate Margarita or a variation such as a Blood Orange Margarita, raspberry margarita, and never to be overlooked, for non-drinkers or pregnant gals, Mild-Eyed Margaritas. Raspberry Margarita
From AZ Central

2 ounces tequila
1 ounce Triple Sec
2 ounces raspberry puree (using fresh or frozen raspberries puree in a processor and push through a fine mesh sieve)
4 ounces homemade margarita mix (2 parts fresh lime juice, 1 part fresh lemon juice, sugar to taste)

Mix all ingredients with ice in a blender until smooth.
Alternately stir all of the ingredients in a glass and pour into glass filled with ice.
Serve both the blended and the on the rocks versions in a margarita glass.

Serves 1.

Happy Hour: Watermelon-Tequila Cocktails

Since today is National Tequila Day (cheers!), I thought I'd share my latest obsession with you. While I'm a huge fan of the classic margarita combination of tequila and fresh-squeezed lime juice, it pales in comparison to the delightful pairing that is watermelon juice and tequila. I'm so crazy about this dynamic duo that I've already made three different cocktails with it. The one seen here - my current fav - is a mixture of watermelon, tequila, mint, blueberries, and lime juice. With its sweet, minty flavor, refreshing thirst-quenching quality, and beautiful blushing color, this cocktail is almost perfect. I say almost because it's far too easy to drink. A problem that's quickly solved with a generous float of tequila. To get the party, or the weekend, started, make this drink tonight

Today is the first official day of summer, also known as the summer solstice, the day with the longest amount of sunlight in the year. Now that summer is finally here, I suggest that each and every one of you host a party at least once (I'm hosting several!) this summer. There is often the unfortunate misconception that in order to throw a party, one must have a special occasion. It doesn't have to be a birthday, anniversary, or retirement, so here are my top 10 reasons to throw a fiesta this summer:

4th of July
A heat wave (have a water balloon/gun fight)
National Piña Colada Day (July 10)
French Independence Day (July 14)
Somebody's half birthday
The All-Star Baseball Game
It's the middle of summer (A Mid Summer Night)
The arrival of the first tomatoes (substitute peaches, corn, zucchini, etc)
You've Bought New Patio Furniture/Tiki Torches/Margarita glasses, etc.
Swimming alone isn't as fun as having all of your friends over for a pool party

I was so happy to learn that so many people joined in our Show Us Your Cookbooks challenge. It was so fun to see them all!
