Jun 15 2009 - 7:50am Even if you had pork chops and salad last night, it's still possible to enliven your palate with a new variation on the same standard. Stretch your dollar (and your resourcefulness) by using leftover
bone-in pork chops.
Encrust them with a hefty smattering of breadcrumbs and Parmesan cheese for a satisfying crunch.

Ahhh...I've made this recipe a few times before, it's one of my faves! I make this salad all the time on its own too...very tasty & so easy!
1This looks great I will have to try it. Love Nigella.
2Darn it! I wish I'd seen this recipe two days ago. I'll have to add it to my favorites. Looks delish.
3i just had a variation of this a couple days ago! instead of tomato i opted to make a warm salad with pumpkin, sweet potato, beetroot, feta, pine nuts and baby spinach with a garlic vinaigrette...
I will try adding parmesan to the mix next time sounds like it will add another dimension!
