Unlike creamed spinach, this vegetable side isn&#039;t swimming in heavy cream; the cream adds subtle body, while smoky bacon rounds out the collards&#039; bitter character. &lt;/p&gt;

 <title>Mac Attack! Macaroni and Three Cheeses</title>

There&#039;s nothing quite as comforting as a plate full of gooey, cheesy macaroni with a crispy topping, which is why we&#039;ll be featuring our favorite mac and cheese recipes for the next four weeks. &lt;/p&gt;
&lt;p&gt;To kick things off, I made this savory and somewhat classic macaroni and three cheeses. Parmesan, white cheddar, and Gorgonzola are combined with a onion-infused béchamel. The addition of Worcestershire sauce may seem odd, but I assure you, it gives a subtle tang to the sauce and mellows out the pungency of the blue cheese. &lt;/p&gt;

&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;1 pound elbow macaroni&lt;br /&gt;
1 tablespoon vegetable oil&lt;br /&gt;
1 large onion, finely chopped&lt;br /&gt;
5 cups milk&lt;br /&gt;
1 stick (4 ounces) unsalted butter&lt;br /&gt;
3/4 cup all-purpose flour&lt;br /&gt;
3 tablespoons Dijon mustard&lt;br /&gt;
1 teaspoon Worcestershire sauce&lt;br /&gt;
2 teaspoons kosher salt&lt;br /&gt;
1/2 teaspoon freshly ground pepper&lt;br /&gt;
4 cups shredded white Cheddar cheese (about 1 pound)&lt;br /&gt;
2/3 cup Gorgonzola (about 4 ounces), at room temperature&lt;br /&gt;
1 1/2 cups freshly grated Parmesan cheese (about 6 ounces)&lt;br /&gt;
3/4 cup fine plain bread crumbs, preferably homemade &lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;In a large pot of boiling salted water, cook the macaroni until barely al dente, about 6 minutes. Drain; return to the pot.&lt;/li&gt;
&lt;li&gt;Heat the oil in a large saucepan. Add the onion and cook over moderately high heat until softened, about 5 minutes. Add the milk and bring to a simmer.&lt;/li&gt;
&lt;li&gt;Meanwhile, preheat the oven to 350°.&lt;/li&gt;
&lt;li&gt;Melt 6 tablespoons of the butter in another large saucepan. Add the flour and cook over moderate heat, stirring constantly, until lightly golden, about 5 minutes; remove from the heat.&lt;/li&gt;
&lt;li&gt;Gradually whisk the simmering milk into the flour and butter mixture until smooth. Bring the sauce to a simmer and cook over low heat, whisking, until thick and bubbling, about 7 minutes.&lt;/li&gt;
&lt;li&gt;Stir in the mustard, Worcestershire sauce, salt and pepper. Add the Cheddar, Gorgonzola and 3/4 cup of the Parmesan and cook over low heat, stirring, just until melted. Fold in the macaroni until coated with sauce. Spread the macaroni in a 3-quart baking dish.&lt;/li&gt;
&lt;li&gt;Melt the remaining 2 tablespoons of butter in a medium skillet. Add the bread crumbs and cook over low heat, stirring constantly, until coated. Transfer to a bowl and stir in the remaining 3/4 cup of Parmesan. Sprinkle the crumbs over the macaroni and bake for about 25 minutes, or until lightly golden and bubbling.&lt;/li&gt;
&lt;li&gt;Preheat the broiler. Brown the macaroni under the broiler for 10 to 15 seconds; don&#039;t scorch the crumbs. Let stand for 15 minutes before serving.&lt;/li&gt;

Although Parmesan is made in the US, Argentina, and Australia, for it to be authentically Italian it must be called Parmigiano-Reggiano. On average Parmesan is aged for two years. It has a granular texture that&#039;s sometimes characterized by crystals. &lt;/p&gt;
&lt;p&gt;The flavor of Parmesan is salty, complex, and nutty. Parmesan is insanely versatile: it&#039;s obviously delicious in pasta, makes a wonderful addition to any cheese plate, is great shaved on salads or crisped on pizzas, and makes an exceptional frico. &lt;p&gt;Frico, quite simply a crispy disk made of grated cheese, are native to Italy&#039;s Friuli region. &lt;li&gt;Put oven racks in upper and lower thirds of oven and preheat oven to 350°F.&lt;/li&gt;
&lt;li&gt;Pulse peppercorns in grinder until coarsely ground.&lt;/li&gt;
&lt;li&gt;Whisk together flour, baking powder, salt, 2 cups cheese, and 1 tablespoon ground black pepper in a large bowl.&lt;/li&gt;
&lt;li&gt;Blend in butter with a pastry blender or your fingertips until mixture resembles coarse meal.&lt;/li&gt;
&lt;li&gt;Whisk 3 eggs with milk and add to flour mixture, stirring with a fork until a soft dough forms.&lt;/li&gt;
&lt;li&gt;Turn dough out onto a lightly floured surface and quarter dough. Using well-floured hands, form each piece into a slightly flattened 12-inch-long log (about 2 inches wide and 3/4 inch high). Transfer logs to 2 ungreased large baking sheets, arranging logs about 3 inches apart.&lt;/li&gt;
&lt;li&gt;Whisk remaining egg and brush some over logs, then sprinkle tops of logs evenly with remaining 1/4 cup cheese and 1/2 tablespoon ground pepper. &lt;/i&gt;&lt;br /&gt;

&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;6 to 8 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat&lt;br /&gt;
3 tablespoons olive oil&lt;br /&gt;
1/2 cup finely chopped shallots, (about 2)&lt;br /&gt;
1 cup Arborio or Carnaroli rice&lt;br /&gt;
1/2 cup dry white wine&lt;br /&gt;
4 to 6 tablespoons unsalted butter&lt;br /&gt;
1/2 cup grated Parmesan cheese, plus extra for grating or shaving&lt;br /&gt;
3/4  pound  shelled cooked Dungeness crab&lt;br /&gt;
1  tablespoon  minced fresh sage leaves&lt;br /&gt;
Salt, freshly ground pepper
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Heat stock in saucepan over medium heat; keep at a low simmer. Heat olive oil in a heavy-bottomed saucepan over medium heat.&lt;/li&gt;
&lt;li&gt;Add shallots to oil, and cook, stirring, until translucent. Add rice, and cook, stirring, until rice begins to make a clicking sound like glass beads, 3 to 4 minutes.&lt;/li&gt;
&lt;li&gt;Add wine to rice mixture. Cook, stirring, until wine is absorbed by rice.&lt;/li&gt;
&lt;li&gt;Using a ladle, add 3/4 cup hot stock to rice. Using a wooden spoon, stir rice constantly, at a moderate speed. When rice mixture is just thick enough to leave a clear wake behind the spoon, add another 3/4 cup stock.&lt;/li&gt;
&lt;li&gt;Continue adding stock 3/4 cup at a time and stirring constantly until rice is mostly translucent but still opaque in the center. Rice should be al dente but not crunchy. As rice nears doneness, watch carefully and add smaller amounts of liquid to make sure it does not overcook. The final mixture should be thick enough that grains of rice are suspended in liquid the consistency of heavy cream. It will thicken slightly when removed from heat.&lt;/li&gt;
&lt;li&gt;Remove from heat. Stir in butter, Parmesan cheese, crab meat and sage; season with salt and pepper.&lt;/li&gt;
&lt;li&gt;Divide the mixture among four shallow bowls, mounding risotto in the center, and grate or shave additional Parmesan over risotto. Serve immediately.&lt;/li&gt;
