'Wich of the Week: Peanut Butter and Jelly Waffle 'Wich

Last weekend I was struck by a very intense craving for one of my nostalgic childhood foods, so I hightailed it to the grocery store to buy some frozen waffles. I've said before that some of the best sandwiches evoke memories, and this recipe goes back when I was maybe 7 or 8, and my mom fixed me some waffles before realizing we were out of syrup. She improvised to make this sandwich, and "peanut butter and jelly waffles" soon became one of my favorite meals.Like the nonwaffly version, this PB&J is very easy to make and can inspire countless variations: almond instead of peanut butter, different flavors of waffles or even waffles from scratch, honey in place of jelly, Elvis-style with bananas, and on and on. This time I used Eggo cinnamon waffles, which I highly recommend. The only requirement for this breakfast or lunch sandwich - and what sets it apart from a traditional PB&J - is using hot, toasted waffles, which melt the peanut butter in just the right warm and comfy way.

Peanut Butter and Jelly Waffle 'Wich
Original Recipe

Ingredients

2 frozen waffles, plain or flavored
2 tablespoons creamy peanut butter
2 tablespoons jelly of your choice

Directions

Toast waffles in toaster on high, until they are medium brown.
On one waffle, spread the peanut butter, making sure to fill in the square indentations. On the other waffle, spread the jelly.
Place the peanut butter and jelly sides together, cut in half, and serve immediately.

Makes 1 sandwich.

Random Kitchen Gadgets: Useful or Useless?

While there are kitchen gadgets that are totally helpful and necessary - the food processor, a mixer - sometimes it seems like there are more random kitchen gadgets than essential ones. There are so many useless tools that we have an entire feature devoted to them. Not to mention the Yum Market on TeamSugar is jam-packed with kitchen contraptions.

For example, look at this peanut butter and jelly spreader. This handy, double-sided gadget -bookmarked by amh678 - smoothly scoops and spreads peanut butter and jelly. Sure it's fun, but isn't it just a glorified butter knife? What do you guys think of these random kitchen gadgets? Useful or useless?

Today is National Peanut Butter and Jelly Day. Although I ate them frequently when I was still in school, now I have a peanut butter and jelly sandwich maybe once a year. I don't know what it is about this classic all American sandwich combination but it optimizes the school lunch. My mom is a preschool teacher and everyday she makes herself a peanut butter and jelly (grape) sandwich. She eats this lunch at school but when she is at home, she makes her other lunchtime staples (turkey and crackers, grilled cheeses, cream cheese and pretzels). Which makes me wonder, do people only eat peanut butter and jelly sandwiches in school? What about you reader, do you eat peanut butter and jelly sandwiches?

Your Political Leanings May Determine What's on Your Plate

Everyone says that you are what you eat. But could your political party affiliation be the driver of what goes on your plate, too? That's what food trend analyst Phil Lempert (of koodie fame) is arguing. Examining 2009 data from Hunch, he found conservatives opt for "mainstream, comfort food staples," while liberals are likely to gravitate toward "international and exotic cuisines."

According to Lempert, conservatives correlated with foods like pizza, macaroni and cheese, and peanut butter and jelly for lunch, plus fried chicken, meatloaf, and steak for dinner, with Italian food being the cuisine of choice.

Liberals, on the other hand, preferred Asian: Thai and Indian for lunch, and veggie burgers and green curry for supper. His findings indicate they also tend to make more nutritionally sound choices, such as eating vegetables more often and fast food less frequently, and making dishes from scratch.

Those looking to toe the bipartisan line should stick to mutually-loved foods such as hot dogs, bacon double cheeseburgers, ice cream sans sprinkles, romaine lettuce, and salt on a margarita glass. Do these findings line up correctly with your political leanings?

National Peanut Butter Day

Woo-Hoo! I know you've all been waiting for it anxiously and finally it's here! Today is National Peanut Butter Day! Maybe I'm being a bit too enthusiastic about the whole thing, but I mean come on, who doesn't love a little peanut butter every now and again? Did you know that peanut butter was originally created to perform the same function as toothpaste way back in 1880? Or that peanut butter and jelly was a result of World War II? Apparently soldiers were given peanut butter instead of meat due to enforced rationing. The soldiers added jelly to make it taste better and viola the all American sandwich was born. Following the regulations stated by the U.S Food and Drug Administration, 2 rodent hairs are allowed in every 100 grams of peanut butter. (Ewww, isn't that gross?!)
In Denmark peanut butter is called pindakass which translates to peanut cheese. The Dutch government protects the word butter so the peanut butter makers had to improvise and substitute cheese for butter.

Killer App: Melon, Prosciutto, and Mozzarella Brochettes

Although not as widely known as peanut butter and jelly, or salt and pepper, I consider melon and prosciutto to be a classic flavor combination. There is something about the sweet juiciness of the melon that so wonderfully complements the salty porkiness of the prosciutto. Throw some fresh mozzarella in the mix and you've got an appetizer that is insanely divine to eat!

This recipe serves the trio on a skewer, making it the perfect crowd-pleasing cocktail party bite. A drizzle of thick basil oil takes the easy and quick-to-prepare brochettes to a whole new level of deliciousness. Sound like something you might enjoy? Get the recipe and read more.

Brochettes of Melon, Prosciutto, and Fresh Mozzarella

If melon isn't your cup of tea, consider using another type of fruit. I've also made this exact recipe with ripe peaches.

Ingredients

1/2 cup olive oil
1/3 cup (packed) fresh basil leaves plus sprigs for garnish
1 medium shallot, quartered
1 small (about 2-pound) cantaloupe, halved crosswise, seeded, cut into 6 wedges, peeled
6 small fresh water-packed mozzarella balls or one 8-ounce ball, drained
6 thin slices prosciutto, cut in half lengthwise, gathered into ruffle
6 8-inch wooden skewers

Directions

Using on/off turns, puree olive oil, 1/3 cup basil, and shallot in processor until basil and shallot are finely chopped.
Cut each cantaloupe wedge crosswise in half. If using large mozzarella ball, trim and cut into 6 cubes.
Alternate 1 melon piece, 1 piece ruffled prosciutto, 1 mozzarella ball or cube, 1 more prosciutto piece, and 1 more melon piece on each skewer. Can be prepared 2 hours ahead; cover and refrigerate. Bring to room temperature 15 minutes before serving.
Arrange skewers on platter. Drizzle with basil oil and sprinkle with cracked black pepper. Garnish with basil sprigs.

Serves 6.

Kellogg's Recalls Peanut Butter Sandwiches

Could peanut butter be the new milk? Following a salmonella outbreak thought to be caused by tainted peanut butter, Kellogg's announced late yesterday that it has asked stores to halt sales of all Austin and Keebler peanut butter sandwiches.While the company says it hasn't received any complaints or found any issues related to the products, Kellogg's has voluntarily ceased the sale of these products as a precautionary measure, after its supplier, Peanut Corp. of America, issued a recall for its peanut butter, due to possible contamination.

Austin and Keebler are pulling toasted peanut butter sandwich crackers, peanut butter and jelly sandwich crackers, cheese and peanut butter sandwich crackers, and peanut butter-chocolate sandwich crackers from store shelves across the country.
