Certain leftovers are an excellent topping for pizza, while other leftovers are an outstanding pizza crust. Take pita breads, for example. Whenever I have a couple random pitas lying around, I use them to make pizza.

While the bridal shower was sunny and sophisticated, my friend Ronda's bachelorette will be fantastical and fabulous. Since she's a huge fan of belly dancing, the maid of honor has chosen this sensual dance to serve as the party's theme. Filled with Greek flavors, this delicious dinner is part salad, part pizza. A crisp pita is topped with sautéed spinach and roasted tomatoes. A creamy yogurt feta sauce, scented with fresh lemon juice, finishes off the open-faced dish.

Yesterday before heading to the Nordstrom Fall Preview Fashion Show, I whipped up a quick batch of my signature nachos for FabSugar and I to enjoy. With no time to run to the store, I used ingredients leftover from last week's Greek nachos to make a vegetarian, Mediterranean-inspired appetizer. The pita chips were crisped in the oven before being topped with a Spanish sheep's milk cheese.

Yesterday I suggested you stuff a pita with chicken, mushrooms, and arugula. A filling that is just as delicious and a little more traditional is pictured below. Do you know what it's called?
