With six hours to the dinner party, I frantically began to create a menu with appetizers, entree, and dessert. I wanted a dessert that was rapid, unexpected, and downright delicious. A dessert like &lt;b&gt;Gourmet&lt;/b&gt;&#039;s fast butterscotch pudding. &lt;/p&gt;
&lt;p&gt;From start to finish it takes less than 20 minutes to make. At first I was worried about it not setting quickly enough, but after chilling for three hours, it was thick, rich, and creamy. The girls were pleasantly surprised when I pulled the puddings from the fridge and totally satisfied after eating them. &lt;/p&gt;

6 passion fruits, halved, juice and seeds scooped into bowl&lt;br /&gt;
Special equipment: 8 3/4-cup ramekins or custard cups

&lt;li&gt;Combine raisins and rum in small bowl. Let stand at room temperature while preparing pudding.&lt;/li&gt;
&lt;li&gt;Combine nonfat milk and next 4 ingredients in heavy medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer; remove from heat. Allow to steep uncovered 1 hour. Strain coconut broth.&lt;/li&gt;
&lt;li&gt;Rinse rice in medium bowl of cold water. Drain. Repeat 2 more times. Cook 1 cup coconut broth and rice in heavy medium saucepan over medium-high heat until almost all liquid is absorbed, stirring constantly, about 3 minutes. Add remaining coconut broth; cook over low heat until rice is tender, stirring frequently, about 13 minutes. Remove from heat. Stir in 6 tablespoons sugar (mixture will be thick). Transfer to large bowl; cool.&lt;/li&gt;
&lt;li&gt;Whip cream in medium bowl until cream holds peaks. Fold half of whipped cream into cooled rice. Drain raisins. Stir raisins and lime peel into rice. Fold in remaining whipped cream. Divide mixture among eight 3/4-cup ramekins or custard cups.&lt;/li&gt;

&lt;li&gt;Heat the oven to 325 degrees.&lt;/li&gt;
&lt;li&gt;Place the cream, milk, vanilla seeds and pod, and cinnamon sticks, if using, in a medium saucepan, and bring to a boil. Remove from heat, cover with plastic wrap, and let sit for 30 minutes to infuse flavors.&lt;/li&gt;
&lt;li&gt;Cut the brioche into 1/4-inch-thick slices. Cut slices into quarters, setting aside the rounded top pieces. Fill a 9-by-12-inch gratin dish or a deep oval roasting dish with the quartered pieces.&lt;/li&gt;
&lt;li&gt;Return the milk mixture to a boil, remove from heat, and discard vanilla pod and cinnamon sticks.&lt;/li&gt;
&lt;li&gt;Add chocolate, and whisk until smooth. Combine egg yolks and sugar in a large bowl, and whisk to combine. Pour chocolate mixture very slowly into egg-yolk mixture, whisking constantly, until fully combined.&lt;/li&gt;
&lt;li&gt;Slowly pour half the chocolate custard over bread, making sure all the bread is soaked. Arrange the reserved bread on top in a decorative pattern, and press firmly so bottom layer of bread absorbs chocolate mixture.&lt;/li&gt;
&lt;li&gt;Spoon remaining custard over bread until completely covered and all cracks are filled. Place a piece of plastic wrap over the dish; press down to soak bread thoroughly.&lt;/li&gt;
&lt;li&gt;Remove plastic, wipe edges of the dish with a damp towel, and allow to sit for 30 minutes.&lt;/li&gt;
&lt;li&gt;Place gratin dish in a larger pan; fill outer pan with hot water halfway up the sides of the gratin dish. Bake until set, about 35 minutes. Cool on a rack for 15 minutes.&lt;/li&gt;
&lt;li&gt;Whisk the creme fraiche until soft peaks form. Serve pudding warm, garnished with creme fraiche and chocolate shavings.&lt;/li&gt;

&lt;p&gt;&quot;Pouding chômeur&quot;, which is French for the unemployed&#039;s pudding, is a traditional dessert from Quebec.  It is normally a very basic recipe but since I had some apples on hand, I adapted a traditional recipe by adding apples and cinnamon.  It resulted in a cake that was a bit more moist and sticky than the traditional one, but so much more flavorful. The cinnamon was a nice addition too.&lt;/p&gt;
&lt;p&gt;
&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;* 2 tbsp butter&lt;br /&gt;
* 1 egg&lt;br /&gt;

* 3/4 cup flour&lt;br /&gt;
* 1 tsp baking powder&lt;br /&gt;
* 1/2 tsp ground cinnamon&lt;br /&gt;

* 1 or 2 apples, cored and peeled, finely chopped&lt;/p&gt;

1/3 cup granulated sugar&lt;br /&gt;
Salt&lt;br /&gt;
2 1 1/2-inch strips of lemon zest&lt;br /&gt;
1/2 a vanilla bean, split lengthwise to expose seeds&lt;br /&gt;
1/2 cup water&lt;br /&gt;
3/4 cup Arborio rice&lt;br /&gt;
3 egg yolks&lt;br /&gt;
1 teaspoon fresh lemon juice&lt;br /&gt;
4 cups mixed Summer fruits, such as strawberries, blackberries, blueberries, peaches, apricots, or figs, in any combination, sliced as needed&lt;br /&gt;
Superfine sugar (optional)
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Combine the milk, granulated sugar, a pinch of salt, lemon zest, vanilla bean, and water in a wide saucepan. Bring to a simmer over moderate heat, stirring to dissolve the sugar.&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/li&gt;

&lt;li&gt;Bring 3/4 cup water to boil in heavy medium saucepan over high heat.&lt;/li&gt;
&lt;li&gt;Stir in couscous. Remove from heat. Cover and let stand until water is absorbed, about 15 minutes. Fluff with fork.&lt;/li&gt;
&lt;li&gt;Melt butter in small nonstick skillet over medium-high heat. Add banana and sugar and sauté until banana is soft, about 1 minute. Cool.&lt;/li&gt;
&lt;li&gt;Using electric mixer, beat cream in large bowl until soft peaks form. Fold in cream of coconut and triple sec.&lt;/li&gt;
&lt;li&gt;Reserve 6 tablespoons whipped cream mixture for topping.&lt;/li&gt;
&lt;li&gt;Fold candied pineapple, couscous, and banana into remaining whipped cream mixture in large bowl. Divide mixture among 6 parfait glasses or dessert bowls. Can be made 4 hours ahead. Cover whipped cream mixture and puddings separately and refrigerate.&lt;/li&gt;
