 <title>Mediterranean Quiche Is Great Morning, Noon, or Night</title>

The thing I love about quiche is its timelessness. It can be enjoyed at breakfast, lunch, or dinner. I&#039;ve even eaten a cold slice as a snack in the afternoon! It&#039;s also a great way to use up old and leftover ingredients. This Mediterranean-inspired quiche is my latest favorite recipe. It&#039;s a perfect easy meatless Monday meal, and it&#039;s so good you may end up eating half the quiche in one sitting! 1 cup sliced yellow onions
1 medium zucchini, chopped
1 red pepper, chopped
1 teaspoon minced garlic
4 ounces oil-packed sun-dried tomatoes, drained and chopped
3 tablespoons chopped fresh basil
2 teaspoons chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 large eggs
1 1/4 cups half-and-half
1/2 cup grated Gruyere
1/2 teaspoon crushed red pepper

3 ounces goat cheese, crumbled&lt;p&gt;&lt;/p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Preheat the oven to 375 degrees F.&lt;/li&gt;&lt;li&gt;In a large skillet melt the butter over medium-high heat. Add the onions and zucchini and cook, stirring, for 6 minutes. Add the red peppers and cook, stirring, until the vegetables are wilted, about 10 minutes.&lt;/li&gt;&lt;li&gt;Add the garlic and cook for 1 minute.&lt;/li&gt;&lt;li&gt;Add the tomatoes, basil, and thyme and season lightly with salt and pepper. Cook, stirring, for 1 minute. Remove from the heat and let cool.&lt;/li&gt;&lt;li&gt;In a bowl, beat the eggs and half-and-half together. Add the salt, pepper, grated Gruyere, and crushed red pepper.&lt;/li&gt;&lt;li&gt;Spoon the vegetable mixture into the prepared piecrust, pour in the egg mixture, and crumble the goat cheese on top. Bake for 25 to 30 minutes until set. Remove from the oven and let cool for 30 minutes before serving.&lt;/li&gt;&lt;/ol&gt;

&lt;p&gt; As you can see from the photo, the quiche was really good and at the end I had a bunch of crumbs and a tiny sliver left (just enough for a photo)! The original recipe called to use a variety of mushrooms, so I picked butter mushrooms, morels, brown button. The combination of different mushrooms along with the melty fontina cheese was perfect. I cheated on the crust and opted to use a store bought pie crust. Beware when you are cooking the crust before hand, it can start to shrink if the oven is too hot. If it shrinks too much there isn&#039;t much space for the filling. Quiches are perfect for brunches or breakfasts and this one is packed full of flavor! &lt;/p&gt;

15 ounce block of tofu, diced
1 teaspoon minced garlic
Salt and pepper to taste
1 large leek (or two small), sliced
20 cherry or grape tomatoes, halved
3 eggs
3/4 cup plain soy milk (or regular milk)
1/4 cup chopped fresh basil
1/8 teaspoon pepper
1/4 cup shredded part-skim mozzarella cheese
1 premade whole wheat pie shell

&lt;p&gt;&lt;/p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;&lt;ol&gt;&lt;li&gt;Preheat oven to 375° F.&lt;/li&gt;
&lt;li&gt;Heat the olive oil on medium heat in a pan. Add the tofu, garlic, salt, and pepper, and cook for five minutes, stirring often. Add the leeks and continue stirring while cooking for another 10 minutes, or until the tofu is slightly browned and the leeks look translucent. 

&lt;/li&gt;
&lt;li&gt;Remove from heat and stir in the tomatoes.

&lt;/li&gt;
&lt;li&gt;In a separate bowl whisk eggs, soy milk, fresh basil, and pepper.

&lt;/li&gt;
&lt;li&gt;Pour the tofu, leek, and tomato mixture into the pie shell. Sprinkle the shredded cheese on top, and then pour the egg mixture over that.

&lt;/li&gt;
&lt;li&gt;Cover a baking sheet with aluminum foil and place the quiche on that to bake for 35 to 45 minutes, or until the top of the quiche is slightly brown. 

&lt;/li&gt;
&lt;li&gt;Allow quiche to cool for 15 minutes before slicing. Serve warm or at room temperature with a fresh salad. Enjoy!&lt;/li&gt;&lt;/ol&gt;
