41 years ago today, Rachael Ray was born in Glen Falls, NY. While she's probably not ringing in the year with another skydiving trip, the 30 Minute Meals and talk show star is doubtless just as campy as ever. The words she's introduced to the English language, like "yum-o" and "EVOO," may have you rolling your eyes, but American families' kitchens (and vocabularies) certainly wouldn't be the same without her. Soup's On: Cheddar Beer Soup

When I made cheddar cheese soup a couple of months ago, I had a hard time choosing between two recipes. I went with the classic "best ever" cheese soup recipe from Cook's Illustrated rather than the super simple variation from Everyday With Rachael Ray. To treat myself for Valentine's Day I decided to give the other recipe a try. Good thing I did because I prefer this velvety version! Flavored with leeks instead of celery and beer instead of sherry, this soup has a wonderful cheesy taste. Mustard adds depth and its slight tang offsets the beer. Cheddar Beer Soup
From Everyday with Rachael Ray magazine

5 tbsp. butter
2 carrots, finely chopped
2 leeks, white and light green parts only, finely chopped
Salt and pepper
1/3 cup flour
3 cups milk
One 12-ounce bottle amber beer, such as Dos Equis*
1 1/2 tablespoons Dijon mustard
10 ounces sharp cheddar cheese, grated (about 3 1/2 cups)
Croutons, for garnish

In a large saucepan, melt the butter over medium heat.
Add the carrots and leeks, season with salt and pepper and cook, stirring, until soft, 10 minutes.

Add the flour and cook, stirring often, for 2 minutes.

Slowly pour in the milk, whisking constantly.

Increase the heat to medium-high, add the beer and mustard and bring the soup to a boil, whisking constantly. Reduce the heat to low and simmer, whisking, until creamy and thickened, about 10 minutes.

Remove the pan from the heat. Whisk in the cheese 1 handful at a time until combined.

Season to taste with salt and pepper. Top with the croutons.

Serves 4.

*I couldn't find Dos Equis so I used Pacifico.

Croutons
From Inger Bareilles

7 slices thick white bread, crusts removed
2 tbsp. melted butter
2 tbsp. extra virgin olive oil
1 tbsp. garlic, minced
1 tbsp. fresh thyme, minced
salt and pepper

Preheat the oven to 375°F.
Slice the bread into small cubes, about half-an-inch by half-an-inch.
In a large bowl toss the bread cubes with the butter, oil, garlic, thyme, salt and pepper. Toss well to coat all of the bread pieces.
Spread out on a baking sheet covered with foil.
Bake in the oven, checking often for 20-25 minutes.
Remove and let cool 5 minutes. Serve in a bowl alongside the cheddar cheese soup.

The Scoop: DogCatemy Awards Gala

Get a glimpse of animal-loving celebrities and their pets at the North Shore Animal League America’s Second Annual DogCatemy Awards Gala, recently held at NYC's Capitale. The event encourages pet owners to shoot short flicks showing how they share their lives with furry friends and then screens – and awards – several of these mini movies in categories like "Best Tail-Waggin Comedy," "Best Dogumentary," and more. All proceeds from the ceremony support the North Shore Animal League America’s mission of rescuing pets and finding them loving homes throughout the world.

A Funny Thing Happened With Michael J., Lance & John

Michael J. Fox stole the show, but he wasn't the only big name out at the A Funny Thing Happened on the Way to Cure Parkinson's event on Saturday night in NYC. John Mayer rocked out on stage in his velvet suit while Lance kept his vocal stylings to himself. He also had no little blondes on his arm, though rumor has it that his most recent lady friend isn't an Olsen after all. It looks like all the boys had a blast together at the event and, golf claps, out to support an excellent cause.

Celebs Who Can, Do

Last night Jimmy Fallon and U2's The Edge were honored at the Can-Do Awards in New York. The event was hosted by Bill Clinton and raised funds for the Food Bank of New York. Julianne Moore, Ed Burns and Christy Turlington were among the celebs who came out to get their philanthropy on. Josh Hartnett cleaned up well by finally shaving that chin scruff, while Kate Bosworth looked super skinny in her beautiful Chloe dress. David Bowie and Michael Stipe were among the musicians who attended the event but weirdly enough, it looks like cute Jimmy was the only guy who picked up an instrument.

South Beach Wine & Food - Celebrity Chef Book Signings

During the South Beach Wine & Food Festival, many celebrity chefs were on hand to chat with fans while signing copies of their books. On hand were the usuals (like Rachael and Giada), however there was one particular Food Network bashing chef on hand as well. Yep that's right, our favorite celebrity chef bad-boy, Anthony Bourdain, was there too. On one hand I'm sort of surprised, I thought he hated these guys, but on the other I'm not surprised at all. I mean he is a celebrity chef, so why wouldn't he be there?

Here's what Charles Passy of the Palm Beach Post had to say about the "Howard Stern of the food world":

Of course, in the process of espousing such a philosophy, Bourdain made note of everything from Giada de Laurentiis’ oversized head to Al Roker’s stomach stapling (Bourdain’s point with the latter: Do you really want to bask in the culinary wisdom of a guy who can’t eat?). I laughed so hard, it almost made up for the five numbingly dull hours I spent at the Food Network Awards the night earlier.

But here’s the thing: Just an hour or so before the talk, Bourdain was doing a book-signing session, sitting in the same seat that Giada had occupied moments earlier. Can he have it both ways - mock the famous and bask in fame at the same time?

So what do you guys think, can he have it both ways or is it hypocritical?

Food Network Awards - Red Carpet Part 2

As promised, here's the rest of the Food Network Awards red carpet coverage. These chefs really look glamorous when they're out of their day-to-day clothes (I must say I loved Alton suited-up and Nigella looks stunning here). And I know that by saying stuff like this I am just propagating the whole celebrity & beauty over actual amazing food (notice that these food awards somehow didn't include any prominent restaurant chefs and even the likes of Batali and Bourdain are absent from this red carpet moment). But hey! these are (for the most part) talented folks on a red carpet, enjoying their moment. So let's cut the industry some slack...

South Beach Wine & Food Festival Kicks Off

As I mentioned last week, the South Beach Wine & Food Festival is a big deal in the foodie world. So naturally the event kicked off yesterday with a big bash (make that a burger bash), hosted by our 30 minute meal maven, Rachael Ray. Sadly, I am thousands of miles away on the other coast and wasn't able to attend it, nor will I be able to attend any of the appetite-whetting events (like the Food Network Awards Show, a panel featuring Anthony Bourdain & Tom Colicchio, Al Roker's BubbleQ, Rachael Ray & Giada's Kidz Kitchen, Martha's (and the Mondavi's) tribute brunch, wine-tastings, food-tastings, and other celebrity chef hob-knobbery)... *sigh* oh well... The event (which is expecting over 18,000 people) is mostly sold-out anyway.

Maybe next year, eh?

Until then, I, like most of you (unless you're lucky and if you are, please do share photos and stories with the rest of us!!), will have to settle for images and anecdotes.

Rachael Ray Meets Rachael Ray

Now every wax figure in Madame Tussauds New York will learn how to whip up meals in 30 minutes. Yesterday, Feb. 21, Rachael Ray was on hand to unveil her very own wax replica. Now, I can't tell in these photos, but does wax Rachael come with a wax bottle of EVOO?

If you live in the New York area (or are planning on visiting), you'll be able to get up close and check it out yourself (and pose with her too!). What do you guys think, does it look like her?

Mena All Banged Up On Rachael Ray

Mena and her new bangs stopped by to chat with Rachael Ray this week about Factory Girl. Her co-star Sienna Miller has been promoting as well but in other ways. The two actresses will re-team on the big screen in The Mysteries of Pittsburgh which is an adaptation of the Michael Chabon novel.
