Enter the raspberry shag. &lt;/p&gt;
&lt;p&gt;Don&#039;t be fooled by the vibrant color. This drink - a mixture of sugared muddled raspberries, vodka, lemon juice, and soda - is not overly sweet. It is smooth, refreshing, and fruity. &lt;/p&gt;
&lt;p&gt;The original recipe calls for strawberries, but I decided to try raspberries instead. I think any berry, like blackberries or blueberries, would work well in this concoction, so use what you have on hand. To check out the recipe, read more.&lt;/p&gt;

&lt;p&gt;1 to 2 large sprigs of fresh basil&lt;br /&gt;
1/4 cup sugared raspberries, with juice (recipe below)&lt;br /&gt;
1 1/2 ounces vodka&lt;br /&gt;
1 ounce fresh lemon juice&lt;br /&gt;
2 to 4 ounces chilled soda water&lt;br /&gt;
fresh raspberry, optional for garnish
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;In a cocktail shaker, press the basil and strawberries together with a muddler to release the basil&#039;s flavor.&lt;/li&gt;
&lt;li&gt;Fill the shaker with ice. Measure in the vodka and lemon juice. Cap and shake vigorously.&lt;/li&gt;
&lt;li&gt;Pour into a large glass, top with soda water, and stir. Garnish, if desired, with a raspberry.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Makes 1 drink. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;Sugared Raspberries&lt;/b&gt;&lt;/p&gt;

 <title>Make Use of Summer&#039;s Berries With Ina&#039;s Pavlova</title>

&lt;p&gt;Although it requires time and patience, the recipe is rather simple. The three components are made separately and then are combined just before serving. Ina&#039;s pavlova includes blueberries, but I subbed in cherries - feel free to use your favorite fruit.&lt;/p&gt;
&lt;p&gt;The final dessert is sophisticated, scrumptious, and ideal for Summer entertaining. The outside of the meringue is crisp, while the inside is pillowy and marshmallow-like. 1 teaspoon cornstarch&lt;br /&gt;
Pinch of salt&lt;br /&gt;
1 teaspoon white-wine vinegar&lt;br /&gt;
1/2 cup sugar&lt;br /&gt;
1/2 cup confectioners&#039; sugar, sifted&lt;br /&gt;
1/2 teaspoon pure vanilla extract&lt;br /&gt;
Sweetened Whipped Cream, recipe follows&lt;br /&gt;
1/2 pint fresh strawberries, hulled and sliced&lt;br /&gt;
1/2 pint fresh cherries&lt;br /&gt;
1/2 pint fresh raspberries&lt;br /&gt;
Triple Raspberry Sauce, recipe follows
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 200 degrees. Line a baking sheet with parchment paper. Using an overturned bowl or a cake pan as a guide, trace a 9-inch circle onto parchment. Turn parchment over, marked side down.&lt;/li&gt;
&lt;li&gt;Beat egg whites, cornstarch, salt, and vinegar with a mixer on medium speed until foamy.&lt;/li&gt;
&lt;li&gt;Gradually add sugar. Raise speed to medium-high, and beat until stiff peaks form, about 7 minutes.&lt;/li&gt;
&lt;li&gt;Reduce speed to medium, and gradually add confectioners&#039; sugar. Raise speed to medium-high, and beat until very stiff, glossy peaks form, about 7 minutes. Beat in vanilla.&lt;/li&gt;
&lt;li&gt;Using a rubber spatula or a large spoon, spread meringue into marked 9-inch circle on prepared baking sheet, forming a well in center.&lt;/li&gt;
&lt;li&gt;Bake until outside is firm and bottom lifts easily off parchment, about 2 hours. The inside should still be marshmallow soft. Turn off the oven, keep the door closed, and allow the meringue to cool completely in the oven, about 1 hour or overnight. It will be crisp on the outside and soft on the inside.  When cool, carefully remove from parchment. Pavlova can be stored in an airtight container for up to 2 days.&lt;/li&gt;
&lt;li&gt;Spread the top completely with sweetened whipped cream.&lt;/li&gt;
&lt;li&gt;Combine the strawberries, cherries and raspberries in a bowl and toss with about 1/2 cup of raspberry sauce, or enough to coat the berries lightly. Spoon the berries carefully into the middle of the Pavlova, leaving a border of cream and meringue. Serve immediately in large scoops with extra raspberry sauce.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serves 8-10. &lt;/p&gt;
&lt;p&gt;&lt;b&gt;Sweetened Whipped Cream&lt;/b&gt;:&lt;br /&gt;
1 cup cold heavy cream&lt;br /&gt;
1 tablespoon sugar&lt;br /&gt;
1 teaspoon pure vanilla extract&lt;/p&gt;
&lt;p&gt;Whip the cream in the bowl of an electric mixer fitted with a whisk attachment (you can also use a hand mixer). When it starts to thicken, add the sugar and vanilla and continue to beat until firm. Don&#039;t overbeat!&lt;/p&gt;
&lt;p&gt;Makes 1 cup.&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Triple Raspberry Sauce&lt;/b&gt;:&lt;br /&gt;
1 half-pint fresh raspberries&lt;br /&gt;
1/2 cup sugar&lt;br /&gt;
1 cup seedless raspberry jam (12-ounce jar)&lt;br /&gt;
1 tablespoon framboise liqueur&lt;/p&gt;
&lt;p&gt;Place the raspberries, sugar and 1/4 cup water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and framboise into the bowl of a food processor fitted with a steel blade and process until smooth. Chill.&lt;/p&gt;

&lt;li&gt;In the bowl of an electric mixer fitted with the paddle attachment, beat the butter on medium speed for 30 seconds. With machine running, gradually add the sugar. Continue beating until light and fluffy, about 2 minutes. Scrape down sides of bowl as necessary.&lt;/li&gt;
&lt;li&gt;Add one-third of the flour mixture and one-third of the milk mixture, and beat on low speed until just incorporated. Add remaining flour and milk mixtures in 2 separate batches beating between additions to fully incorporate. Scrape down sides of bowl, and stir by hand to finish.&lt;/li&gt;
&lt;li&gt;Divide batter evenly between prepared pans. Smooth surface with a rubber spatula. Bake until top of cake springs back when lightly pressed and a cake tester inserted in the center comes out clean, 25 to 30 minutes.&lt;/li&gt;
&lt;li&gt;Let cakes cool in pans on wire racks for 5 minutes. Run a small metal spatula around the sides of the pan, and invert cakes onto greased racks. Reinvert cakes onto cooling rack. Let cool completely before filling.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Make the filling&lt;/b&gt;: Whip the cream and sugar in an electric mixer with the whisk attachment until soft peaks form.&lt;/li&gt;

&lt;p&gt;I adapted this from a Guava Turnover recipe in the Rachael Ray magazine. It was very easy to put together and bake, and the final product is cream-cheesy-puff-pastry delicious! Of course, in my book, anything with puff pastry will be amazing. &lt;/p&gt;
&lt;p&gt;
&lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;2 frozen puff-pastry sheets, thawed&lt;br /&gt;
One 8-ounce package cream cheese, cut crosswise into 8 equal slices&lt;br /&gt;
1/2 cup (roughly) raspberry seedless jam (or any flavor jam)&lt;br /&gt;
1 large egg beaten with 1 teaspoon water&lt;br /&gt;
1/4 cup confectioners&#039; sugar&lt;br /&gt;
1 teaspoon milk&lt;br /&gt;
1/4 teaspoon pure vanilla extract
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or spray with cooking spray. On a floured work surface, set a thawed puff-pastry sheet on top and roll out the pastry to a 9-1/2-inch square; cut into 4 squares.&lt;/p&gt;
&lt;p&gt;2. Lay 1 piece each of the cream cheese and 1 tablespoon jam diagonally in the center of each pastry square. Brush the pastry edges with some of the beaten egg; fold to enclose, forming a triangle. Pinch the edges to seal, then crimp with a fork. Brush the egg all over the top and sides. Repeat with the remaining pastry, cream cheese, and jam.&lt;/p&gt;
&lt;p&gt;3. Arrange the turnovers on the prepared baking sheet. Bake until puffy and golden, 15 to 20 minutes. Transfer to a rack to cool for 15 minutes. &lt;/p&gt;
&lt;p&gt;4. Meanwhile, stir together the confectioners&#039; sugar, milk, and vanilla until smooth. Drizzle the glaze over the cooled turnovers.&lt;/p&gt;
