Last night Restaurant Magazine announced their annual list of the world's 50 best restaurants and I am ridiculously embarrassed to say that even though two of them are really close by (Chez Panisse and the French Laundry), I have not been to any of the ones on the list. While I go hang my head in foodie shame, you can check out the list. Oh and it's worth noting that the top 6 are the same as last year and there are only 5 new entries and one that has re-entered.

A provocative article that appeared in a recent issue of the New York Times Magazine broaches the question of whether America should still require tips.
The idea behind tipping is that it improves service by rewarding good waiters and punishing bad ones. But advocates for eliminating tipping say this logic is false, and they believe working for tips discourages teamwork.

A recent study by the Center For Science in the Public Interest (CSPI) has shown that restaurants are incredibly dirty. From moldy refrigerators to live cockroaches to unsanitary prep and cook surfaces, the study illustrates the huge number of restaurants that are cited with health-code violations. Sarah Klein, an attorney for the CSPI, explains why most restaurants have a long way to go before they meet the Food and Drug Administration's health codes: Restaurants aren't motivated to pass a very high safety bar.

Yesterday we mentioned Forbes' Top 10 Up-and-Coming Celebrity Chefs, and today I'm ready to tell you about Food & Wine's Best New Chefs. The annual award was handed out to 10 of the nation's most creative new chefs, and this year's list features chefs who specialize in everything from modern Italian to completely vegetarian meals. Dana Cowin, F&W's editor in chief, said:
Food & Wine has been scouting extraordinary chefs for the past two decades, and I expect this year’s winners to make us as proud as any of the chefs who have preceded them.

Tyler Florence may be slated to open several new restaurants and stores, but he's certainly not letting that get in the way of what he does best — TV. In addition to Tyler's Ultimate, his current show on Food Network, he's also teamed up with Lifetime and Parade magazine to host a new show, Search For the Greatest American Recipe.
The pilot, which begins production Sunday in Los Angeles, "will follow Florence as he travels to seven regions of the country to find unique homegrown recipes.

When Frank Bruni announced he'd be stepping down as the New York Times's restaurant critic, readers were left with a pressing question: Who will step up to the dinner plate? The food world waited collectively with bated breath until the answer was announced today: Sam Sifton, the paper's current Culture editor, will begin reviewing in October.
The blogosphere wasted no time compiling critical stats on Sifton, and Gawker has already come up with a slew of potential dining guises for him.

Yesterday Restaurant magazine and S. Pellegrino announced its famed list of the world's 50 best restaurants. The list is developed by a large panel of well-regarded international judges consisting of 806 chefs, restaurateurs, food critics, and journalists.
