Happy Hour: Fall Fizz

Recently I attended a female-only cocktail competition hosted by Nirvino. While I've been to many cocktail competitions, I always look forward to Nirvino's monthly contest because the crowd gets to taste each cocktail and ultimately decides the winning drink. Nirvino is an exciting social networking community where drinking is the common denominator. You can rate drinks, bars, bartenders, wine, beer, and different kinds of liquor.

Its a fun concept that makes for an interesting event. After tasting each cocktail everyone gets on their iPhones or Blackberrys to rate the drink. This competition featured Square One Cucumber vodka and the winning bartender was Brooke Arthur from Range restaurant in San Francisco.

Her Fall Fizz delightfully combined the fresh flavors of cucumber, apple, and pear. Lemon juice adds an acidic balance and a dusting of cinnamon gives this drink a holiday feel. Like the gin fizz, it includes egg whites. I can't promise you won't get salmonella, but your drink will be deliciously frothy! Fall Fizz
From Brooke Arthur of Range

Ingredients

1 1/2 ounces cucumber vodka (recommended: Square One)
1/4 ounce apple brandy (recommended: Coeur de Lyon Calvados)
1/4 ounce pear liqueur (recommended: Poires Pear Liqueur)
1/2 ounce egg whites
1/2 ounce fresh squeezed lemon juice
grated cinnamon, for garnish

Directions

Combine all ingredients in a cocktail shaker.
Shake without ice for 30 seconds to emulsify the egg whites.
Add ice to the shaker and shake for another 30-45 seconds.
Strain into a martini glass. Garnish by grating cinnamon over the top of the cocktail.

Makes 1 cocktail.

Happy Hour: Rose Mary

On what may have been the most gorgeous Tuesday night ever, I headed down to the Ferry Building for Chow's Cocktail Square Off. In an attempt to promote and encourage the growing art of mixology, Chow partnered with organic vodka producers Square One to host a cocktail contest.

With contestants from all over the states, the top two - professional mixologist Ronaldo Colli and amateur mixer and shaker Abigail Gullo - met in a Iron Chef style battle. Both had to create signature cocktails that were judged by a panel of local figures, including Chow's editor in chief, Jane Goldman.

In the end Ronaldo's drinks won the contest and the people's choice award. His winning drink, the Rose Mary, was a refreshing mix of vodka, watermelon, and lime juice that was perfectly sweetened and super easy to drink. Rose Mary
From Ronaldo Colli

1/2 branch of rosemary (organic)
4 chunks of watermelon (organic)
1/2 ounce lime juice, fresh squeezed (organic)
3/4 ounce 43 liqueur
1 1/2 ounces Square One Organic Vodka
Splash of agave nectar, if necessary (organic)
3 lime wheels (garnish)
1 long branch of rosemary, leaves peeled off beginning approximately two fingers from the top (garnish)

In a pint glass, muddle rosemary and watermelon, add lime juice, 43 liqueur, Square One Organic Vodka, and ice.
Shake and add agave nectar, if necessary.
Then double strain (fine strain) into a chilled collins glass filled with ice and lime wheels, and finish garnishing with rosemary branch inside of the cocktail.

Serves 1.

Please Note: While Ronaldo made his drink with all organic products feel free to use whatever you have on hand.

Substitution: Feel free to use a splash of simple syrup instead of agave nectar.

Mac Attack! Buffalo Chicken Mac and Cheese

From classic stovetop shells to leek-and-cheddar penne, I've never met a mac and cheese I don't like. But the recipe I'd been craving most of all was one that, up until recently, only lived in my imagination: buffalo chicken macaroni and cheese.

My fantasy finally became reality one weekend when I put together all the elements I'd dreamed about. Al dente elbows of pasta, coated in creamy, sharp cheese sauce, topped with hot pepper sauce and crispy chicken.

It only occurred to me after sinking my teeth into the first bite that I could improve upon it even more by dotting the top with blue cheese crumbles and diced celery squares. That's why I can't wait to make it again! The epitome of indulgence, after the break.

Kobayashi Dethrones Chestnut to Become Krystal King

Takeru Kobayashi continues to beef up his competitive eating record. Yesterday, the Japanese speed-eating demon defeated two-year reigning champion Joey Chestnut in the Krystal Square Off World Hamburger Eating Championship in Chattanooga, TN. Before a live televised audience and a crowd of 10,000, Kobayashi crushed the competition by eating 93 Krystal hamburgers in eight minutes over Chestnut's 81. In addition to reclaiming the title, which he's taken four out of six years, the Japanese victor also won $20,000. Although Chestnut won the Square Off last year with a record of 93 hamburgers, Kobayashi set a new standard by adhering to the contest's new rules. This year, Krystal imposed a "no dunking" rule, which prevented eaters from dipping their burgers in liquid. The competitors were also given five Big Angus Burgers at the start of the competition, each equal to five Krystal burgers in size. While I find competitive eating horrifying, I am still in awe of Kobayashi's accomplishment. I don't think I've ever eaten more than a large cheeseburger in one sitting. The World's Easiest and Most Delicious Brownies. Ever.

OK, so that title might be an exaggeration, but it got your attention, right? If you're looking for a delicious brownie recipe, I highly recommend you use this one. I've made it a million times and it always gets rave reviews.

Don't believe me? Well, 172 people praise it over on the Food Network's website. It's decadent, rich, and insanely chocolaty. Thanks to the help of a hand mixer and microwave, it takes about 15 minutes to make and another 15 to bake.

Since everything is more appealing mini, I like to slice them into small squares and serve as brownie bites. When paired with vanilla ice cream, they also make one mean brownie sundae. If you're a fan of fudgy brownies, you should stop reading this and make these - now! Get the recipe.

I'd say that I was probably born with one in my hand, that's how much I love them - and grilling up a distinctive ginger-infused batch of my own recently only heightened my desire to indulge more. I've always had the itch to go to the Best in the West Nugget Rib Cook-Off in Sparks, NV. With more than 500,000 visitors and 100 tons of ribs, the six-day, free-admission rib festival is one of the largest outdoor barbecue events in North America. How to Pack Burgers For a Picnic

While burgers are a beloved backyard, picnic, and barbecue staple, enjoyed all Summer long, they aren't necessarily the easiest food to transport. However, it can be done. I recently made 16 burgers and successfully carried them to a remote location in Golden Gate Park. There, I grilled the burgers to perfection! Here's what I did:

The night before or morning of your picnic, prep the burger at home. Make any condiments and slice toppings, like tomato or lettuce, that don't spoil quickly. Leave avocado whole and cut on location.
Make the patties and place on a baking sheet lined with plastic wrap.
Cut parchment paper into four- by five-inch squares. The number of squares depends on how many patties you make. You need one less square than patties (I made 16 patties and cut 15 parchment paper squares).
Spread a large sheet of heavy-duty aluminum foil on a work surface.
Place a patty in the middle of the foil. Top with a parchment paper square. Place another patty on top of the parchment paper. Repeat until you have a short stack of four patties. Fold the foil up and around to enclose patty stack.
Repeat, layering patty with parchment paper in stacks of four patties each, until all of your patties are packed.
Store patty packs in fridge until ready to leave. Place stacks in a cooler with reusable ice packs. Do not use regular ice; it could melt all over the meat.
Grill and enjoy at your destination of choice.

Gail and Tom Reveal Details From Top Chef Vegas

At the beginning of every Top Chef episode, Padma Lakshmi reminds viewers that the winner will make a special appearance at the Food & Wine Classic in Aspen, so it's no surprise that much of the events at the festival are devoted to all things Top Chef. Take Gail Simmons and Tom Colicchio's demonstration, entitled "In the Kitchen with Top Chef," for example. The two culinary minds created dishes (her: a strawberry lychee cocktail and shrimp pea pasta; him a lobster pea ravioli), provided tips on how to cook more like a top chef, and best of all, revealed details from the upcoming season that recently finished filming in Las Vegas. On cooking more like a top chef:

"Always use fresh lemon juice!" Gail said when mixing her cocktail, "never that gross stuff that comes in a plastic lemon."
Like Michael Symon said at his seminar, Tom recommends not using extra virgin olive oil for sautéing. "It's a waste of money," explaining that one should use regular olive oil for most things and extra-virgin for dressings and garnishes.
Be creative! Tom likes to take the same three ingredients - like tomatoes, basil, and mozzarella cheese - and see how many distinct dishes he can create with those simple items.

On Top Chef Vegas:

"I've never eaten better on and off the show." Gail openly praised the Las Vegas culinary scene and the next crop of cheftestants.
Tom agreed: "The chefs are more talented, more efficient cooks. Every season there's a surprise, especially Carla comes to mind, but this time there's lots of surprises."
Both Tom and Gail stood by the show's "only as good as your last dish" mantra. Gail explained, "That's the reason we have guest judges because they don't know the contestants like Tom and I do." Then Tom added his two cents, "Look at the Giants vs. the Patriots. Yes the Patriots were a better team, they went into the Super Bowl never loosing a game, but the Giants won fair and square. No one said, 'oh the Patriots win because they played a better season.' The show is the same way."
While Gail takes no part in the final cheftestant selection, Tom looks at the last 20 resumes to make sure none of the prospects previously worked in his kitchen.
The last thing Gail said was, "Season 6 is really amazing," and in an homage to Bravo, "You'll just have to watch what happens."

Is Your Local Starbucks Closing?

By now you must have heard that Starbucks is closing 600 of its stateside coffee shops. Last week Starbucks released the official list of the closing stores with a grand total of 616 closures. The closing stores are company-operated stand alone locations; no bookstore, super market, or airport Starbucks will be shuttered. A recent study by analyst Sharon Zackfia, found that 54 percent of the closing locations are within two miles of another Starbucks. The study also breakdowns the closures by region:

The central part of the country will lose about 13 percent of Starbucks stores that are operated directly by the Seattle company. The Southeast will lose 10 percent, the Northeast 8 percent and the West 5 percent.

The main focus at a sports tournament viewing is the game, so keep the decor to a clean minimum. When the menu consists of an assortment of appetizers, select beautiful platters to serve them on. Think about the color of the food and how it will look once plated.

Place the Spring rolls in an oval shaped yellow platter and the dipping sauce in a matching shallow bowl. Set the quesadillas on a green plate, the meatballs on a blue one, and the asparagus on a yellow one. Arrange the lime squares on a cake tier.

Position the wine glasses in neat rows and a pitcher of drinks on a table that's away from the food - you want to create a flow from one area to another. Don't forget napkins and a charming bouquet of flowers. Daffodils are sunny and scream Spring.
