Fast & Easy Dinner: Skillet Chicken Stew

You don't need all day to make a flavorful and rich chicken stew. This quick-cooking skillet comes together in under an hour. The chicken is coated in flour before being flash-seared. The flour helps thicken the sauce which is a mixture of chicken broth, mushrooms, scallions, and yogurt. Although the recipe says to serve the saucy meat on a bed of cooked rice, feel free to pair it with your favorite stew side, be it mashed potatoes or egg noodles. For the simple yet scrumptious recipe, read more.

Skillet Chicken Stew
From Everyday With Rachael Ray

Ingredients

3 tablespoons flour
1 teaspoon sweet smoked paprika, plus more for seasoning
Salt and pepper
4 chicken leg quarters, split at the joint to separate legs
1 tablespoon butter
One 8-ounce package cremini or white mushrooms, halved
1 bunch scallions, white and green parts thinly sliced separately
1 cup chicken broth
1/2 cup plain whole milk yogurt
Cooked rice, for serving

Directions

In a large bowl, combine the flour, paprika and 2 pinches each salt and pepper. Coat the chicken pieces with the seasoned flour, shaking off the excess.

In a large, deep skillet, melt the butter over medium heat. Add the chicken to the pan, skin side down. Cook, turning occasionally with tongs, until the skin is golden, 6 to 8 minutes. Transfer to a plate.

Add the mushrooms and scallion whites to the skillet and cook, stirring often, until tender, 3 to 4 minutes.

Stir in the chicken broth, scraping up the browned bits from the bottom of the pan, and bring to a boil. Return the chicken pieces to the skillet, cover and simmer over medium-low heat until the juices run clear, 20 to 25 minutes.

Stir the yogurt and scallion greens into the pan sauce; season with salt, pepper and paprika. Stir to coat the chicken with the sauce.

To serve, mound some rice on each of 4 plates and top with the chicken.

Serves 4.

Fast & Easy Dinner: Chicken Pumpkin Stew

Celebrate the flavors of Fall by making this quick-cooking stew. Seared chicken is simmered with broth, chunks of pumpkin, red peppers, and green beans. The thick sauce is seasoned with paprika and creamy peanut butter, resulting in a stew that is satisfyingly scrumptious.

Don't hesitate to modify the recipe: white beans can replace the green beans, onions would be as delicious as red peppers, and butternut squash works if you can't find a sugar pumpkin. To serve this piping hot stew to your family tonight, get the recipe and read more.

Chicken Pumpkin Stew
From Woman's Day

Ingredients

1 Tbsp canola oil
1 1/2 lb skinless, boneless chicken thighs, visible fat trimmed, cut in 1-in. pieces
1 medium onion, chopped
1 red pepper, cut in 1-in. pieces
1 tsp minced garlic
1 can each (14 1/2 oz each) chicken broth and diced tomatoes
1 Tbsp smoked paprika
1/2 tsp salt
3 cups 1-in. cubes peeled sugar pumpkin or butternut squash (1 lb)
8 oz fresh green beans, cut in half
1 Tbsp cornstarch
1/4 cup reduced-fat creamy peanut butter

Directions

Heat oil in large saucepan over medium-high heat. Add chicken; sauté 4 minutes or until browned. Remove to a plate.

Reduce heat to medium. Add onion, pepper and garlic; sauté 4 minutes until softened.

Add 1 1/2 cups broth, the tomatoes, paprika and salt. Bring to a boil; add chicken, pumpkin and beans. Reduce heat, cover and simmer 12 minutes or until chicken and pumpkin are tender.

Meanwhile stir remaining broth, the cornstarch and peanut butter in a bowl until smooth. Add to pot; stir until blended. Cook 2 minutes or until thickened.

Serves 6.

Fast & Easy Dinner: Spring Lamb and Vegetable Stew

According to the food dictionary on Epicurious, stew is a "method of cooking by which food is barely covered with liquid and simmered slowly for a long period of time." However, this recipe proves that a rich flavorful stew can come together in under 30 minutes.

The key is to use a tender cut of meat like perfectly in-season Spring lamb. White wine, canned tomatoes, and store-bought chicken broth combine to make the simple sauce. To experiment with this quick-cooking stew, read more.

Spring Lamb and Vegetable Stew
From Real Simple

Ingredients

2 tablespoons olive oil
1 1/2 pounds lamb steaks (top round or shoulder), bones removed and meat cut into 2-inch pieces
kosher salt and black pepper
4 carrots, cut into 3-inch sticks
1 onion, sliced
1 tablespoon all-purpose flour
1/2 cup dry white wine
2 cups low-sodium chicken broth
1 14.5-ounce can diced tomatoes, drained
4 ounces green beans, cut into small pieces (about 1 cup)
1 cup fresh flat-leaf parsley, chopped

Directions

Heat 1 tablespoon of the oil in a large pot over medium-high heat. Season the lamb with 1/2 teaspoon each salt and pepper. Cook, turning occasionally, until medium-rare, 6 to 8 minutes; transfer to a plate.

Add the carrots, onion, and the remaining oil to the pot. Cook until beginning to soften, 3 to 4 minutes. Add the flour and cook for 1 minute. Add the wine and scrape up any brown bits.

Add the broth, tomatoes, and beans. Simmer until the vegetables are tender, 8 to 10 minutes. Stir in the lamb, parsley, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Serve immediately.

Serves 4.

Fast & Easy Dinner: Lamb, Fig, and Olive Stew

Having a low-key Christmas Eve this year? Consider serving this hearty stew made with ingredients from Southern France. It's not your average midweek meal, but it comes together in less than an hour.

Olives, dried figs, red wine, and herbs de Provence provide rich flavor and delightful texture. Serve with a French red wine and a simple green salad. To look at the recipe, read more.

Lamb, Fig & Olive Stew
From Eating Well

Ingredients

8 ounces lean ground lamb
1 teaspoon extra-virgin olive oil
2 tablespoons plus 1 teaspoon minced garlic, divided
1 teaspoon herbes de Provence
1/4 cup dry red wine
1 14-ounce can reduced-sodium beef broth
2 teaspoons cornstarch
2 plum tomatoes, diced
1/4 cup chopped dried figs
2 tablespoons finely chopped, pitted green olives
1/8 teaspoon freshly ground pepper
2 tablespoons chopped fresh parsley
1 teaspoon freshly grated lemon zest

Directions

Heat a large saucepan over medium heat. Add lamb and cook, breaking up with a wooden spoon, until browned, 4 to 6 minutes. Transfer the lamb to a sieve set over a bowl to drain; discard the fat.

Wipe out the pan; add oil and heat over medium-high. Add 2 tablespoons garlic and herbes de Provence and cook, stirring constantly, until fragrant, about 30 seconds. Add wine and cook, scraping up any browned bits, until slightly reduced, about 1 minute.

Stir together broth and cornstarch in a small bowl. Add to the pan, increase heat to high, and bring to a simmer, stirring constantly. Add tomatoes, figs, olives and pepper and return to a simmer, stirring often. Reduce heat to maintain a simmer and cook, stirring occasionally, until the tomatoes have broken down, about 5 minutes.

Add the reserved lamb and cook, stirring occasionally, until heated through, about 2 minutes.

Combine the remaining 1 teaspoon garlic, parsley and lemon zest in a small bowl. Serve the stew topped with the parsley mixture.

Fast & Easy Dinner: Baked Potatoes With Spicy Vegetable Stew

Baked potatoes are totally underrated, and for some reason they've got a bad rap. It's time we gave the stuffed potato some love. Instead of topping them with cheese and sour cream, these baked potatoes are filled with a spicy vegetable stew making them an entire delicious meal. The stew consists of black beans, carrots, zucchini, and squash, but feel free to stir in your favorite vegetables, or use the stew to top baked sweet potatoes.

To bring the baked potato back into your life, read more.

Baked Potatoes With Spicy Vegetable Stew
From Vegetarian Times

Ingredients

1 clove garlic, minced
1 Tbs. chili powder
1 tsp. ground cumin
14-oz. can diced tomatoes
1/2 cup vegetable broth or water
19-oz. can black beans, rinsed and drained
1 cup diced yellow squash
1 cup diced zucchini
2 Tbs. chopped fresh cilantro
Salt and freshly ground black pepper to taste
1/2 cup diced carrot
4 large russet potatoes, scrubbed (about 2 1/2 lbs.)
1 Tbs. vegetable oil
1 cup chopped onion
1/2 cup chopped green bell pepper

Directions

Preheat oven to 400°F. Pierce potatoes with tines of fork and bake until tender, about 1 hour.

Meanwhile, in large nonstick skillet, heat oil over medium heat. Add onion, bell pepper, carrot, and garlic and cook, stirring often, until vegetables begin to soften, about 10 minutes.

Stir in chili powder and cumin. Add tomatoes, broth and beans. Reduce heat and simmer, covered, 20 minutes.

Add yellow squash and zucchini. Cover and simmer until vegetables are crisp-tender, about 5 minutes. Stir in cilantro and season with salt and pepper.

To serve, split baked potatoes and mash their pulp slightly. Spoon vegetable stew into center.

Serves 4.

Conan Irishes Up "His" St. Patrick's Day Stew

Earlier this week I let you in on how Good Housekeeping published Conan O'Brien's recipe. Unfortunately it wasn't actually Conan's recipe and so a feud was born. All week long Conan has been talking about it and creating Irish recipes of his own. I sort of thought it would never end, but last night Good Housekeeping's editor in chief, Rosemary Ellis, decided to pay Conan a visit. She apologized, gave him a lifetime subscription to Good Housekeeping, offered to teach him how to cook the stew, and actually brought some in for him to try.

After tasting it, Conan decided to "Irish it up" a bit. Let's see, what would make it more Irish? How about some Jameson? Perhaps some Guinness, too? If you want to see what he did, we got the clip, watch it when you read more.

Monday's Leftovers: Tuscan Chicken Stew

While I was planning this week's Sunday Dinner, PartySugar suggested that I find a recipe for Tuscan Chicken Stew. As soon as she said it, I was sold. An Italian stew with a slight licorice and rosemary flavor sounded absolutely divine. However, as good as a stew sounds on a Sunday, it sounds even better to me on a Monday. It only needs 35 minutes on the stove and if you use leftover chicken, it comes together even faster. To check out the recipe for a Tuscan Chicken Stew, read more

Tuscan Chicken with White Beans
From Easy Home Cooking via How Stuff Works

1 large fennel bulb (about 3/4 pound)
1 teaspoon olive oil
1 teaspoon dried rosemary
1/2 teaspoon black pepper
1/2 pound boneless skinless chicken thighs, cut into 3/4-inch pieces
1 can (14-1/2 ounces) no-salt-added stewed tomatoes
1 can (about 14 ounces) fat-free reduced-sodium chicken broth
1 can (15 ounces) cannellini beans, rinsed and drained
Hot pepper sauce (optional)

Cut off and reserve 1/4 cup chopped feathery fennel tops. Chop bulb into 1/2-inch pieces. Heat oil in large saucepan over medium heat. Add chopped fennel bulb; cook 5 minutes, stirring occasionally.

Sprinkle rosemary and pepper over chicken; add to saucepan. Cook and stir 2 minutes. Add tomatoes with juice and broth; bring to a boil.

Cover; simmer 10 minutes. Stir in beans; simmer, uncovered, 15 minutes or until chicken is cooked through and sauce thickens. Season to taste with hot pepper sauce. Ladle into 4 shallow bowls; top with reserved fennel tops.
