 <title>&#039;Wich of the Week: Benedictine Cheese Tea Sandwiches</title>

These ladylike sandwiches are filled with Benedictine cheese, a creamy cucumber-and-scallion spread that&#039;s native to Louisville and often served on Derby Day. &lt;/p&gt;

&lt;p&gt;The Benedictine is a twist on the usual cucumber and cream cheese sandwich, which is by far one of my favorite teatime combos. These sandwiches benefit from the added kick of scallions; in fact, they were so flavorful that no one even complained about the low-fat cream cheese. The only somewhat odd ingredient is green food coloring, but since that&#039;s the tradition, I went with it, and it gave the spread a nice pastel hue. 1 bunch scallions, white parts plus two inches of green parts, finely chopped
8 oz. cream cheese, softened (I used low-fat cream cheese)
1 Tbsp. mayonnaise
1-2 drops green food coloring
8 slices white bread, crusts removed
3 red leaf lettuce leaves
&lt;p&gt;&lt;/p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;&lt;ol&gt;
&lt;li&gt;Peel the cucumber, slice it in half lengthwise, and scrape out the seeds with a spoon. Using a microplane grater, grate the cucumber into a colander and drain the moisture off. Transfer cucumber to a bowl.&lt;/li&gt;

&lt;li&gt;Finely chop the scallions and add them to bowl with the cucumber.&lt;/li&gt;
&lt;li&gt;In the bowl, combine the cream cheese, mayonnaise, and food coloring and mix thoroughly.&lt;/li&gt;

&lt;li&gt;Whisk flour and salt in medium bowl to blend well. Using electric mixer, beat butter and 2/3 cup sugar in large bowl until fluffy. Beat in milk, lemon peel, and vanilla extract. Add flour mixture and beat until blended. Gather dough into ball; divide in half. Flatten into disks. Wrap in plastic and chill at least 2 hours. (Can be made 2 days ahead. Keep chilled. Let soften slightly before rolling out.)&lt;/li&gt;
&lt;li&gt;Roll out each dough disk between sheets of waxed paper to 14x11-inch rectangle, occasionally lifting waxed paper to smooth out wrinkles. Refrigerate dough on baking sheets, still between sheets of waxed paper, until cold and firm, about 30 minutes.&lt;/li&gt;
&lt;li&gt;Place 1 dough piece on work surface. Peel off top sheet of waxed paper. Press same waxed paper gently back onto dough. Turn dough over (still between waxed paper sheets). Peel off top sheet of waxed paper and discard. Using 2 1/4-inch scalloped round cutter and with dough still on waxed paper bottom, cut out cookies. Using 1- to 1 1/4-inch scalloped round cutter, cut out center from half of cookies. Gather dough centers and excess dough around cutouts; shape excess dough into disk and chill. Slide waxed paper with cutouts onto baking sheet and chill. Repeat with remaining dough disk, cutting out rounds, cutting centers from half of rounds to make top rings, and gathering and chilling excess dough. Roll out excess dough between sheets of waxed paper, making more cookie bottoms and top rings. Repeat rolling and cutting until all of dough is used.&lt;/li&gt;
&lt;li&gt;Position rack in center of oven and preheat to 350°F. Spray 2 large baking sheets with nonstick spray. Using metal spatula to lift cutouts from waxed paper, transfer cookie bottoms to 1 prepared sheet and top rings to second sheet, spacing slightly apart (cookies spread very little). Sprinkle some top rings with colored sugar crystals (or leave plain to decorate later). Bake cookies, 1 sheet at a time, until pale golden, about 8 minutes. Cool cookies on baking sheets 5 minutes. Transfer cookies to racks; cool completely.&lt;/li&gt;
&lt;li&gt;Arrange cookie bottoms on work surface. Spread each with 1 teaspoon preserves. Sift powdered sugar over plain cookie rings or decorate with icing and sugar crystals or edible glitter as desired. Press 1 top ring onto each prepared cookie bottom. (Cookies can be made 3 days ahead. Store airtight between sheets of waxed paper in refrigerator.)&lt;/li&gt;

24 very thin slices of white sandwich bread, crusts removed&lt;br /&gt;
1 medium bunch watercress leaves, enough to make about 2 lightly packed cups&lt;br /&gt;
2 bunches of fresh chives, finely snipped to make 1/2 cup&lt;br /&gt;
2 tablespoons homemade or prepared mayonnaise&lt;/p&gt;

&lt;li&gt;Spread goat cheese liberally on all the bread slices. Arrange the watercress leaves in an even layer on 12 of the bread slices. Top each of these slices with a second slice of bread, goat cheese side down.&lt;/li&gt;
&lt;li&gt;Place the chives in a small shallow bowl. Halve each sandwich on the diagonal. Using a small spatula, carefully spread mayonnaise along the long side of one tea sandwich, and then dip this long edge into the chopped chives. Repeat with each tea sandwich.&lt;/li&gt;

&lt;p&gt;You know what calories are, and you probably know that if you eat too many, you&#039;ll gain weight. But do you know how many are in your favorite deli sandwich? Or how many calories you should really eat each day? Most Americans don’t. Only 12 percent can accurately estimate the number of calories they should consume in a day someone their age, height, weight, and physical activity, according to a 2010 survey by the International Food Information Council Foundation. So what is it about calories that keeps us baffled? Last month, we shared some reasons you might be confused about calories - here are four more and the simple steps that will help you do the math.&lt;/p&gt;
&lt;p&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;1. Exercise makes you hungry&lt;/strong&gt;&lt;br /&gt;
Though studies are mixed when it comes to whether exercise actually stimulates or suppresses appetite, many people think of working out as a way to eat whatever they like. &quot;There’s definitely a mentality of &#039;I have sweated therefore I deserve,&#039;&quot; says Bonci. However, with most people burning about 100 calories per mile, a short workout won&#039;t give you a free pass to eat junk food. &quot;If you walk two miles, eating a handful of chips post-workout can undo the calories you burned,&quot; says Bonci. As mentioned above, gym machines don’t accurately measure calories burned, either. &lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Stop the confusion: &lt;/strong&gt; To stop an after-workout binge, fuel up pre-gym, Zied suggests. &quot;Have something before - something with carbs and a little protein, like whole wheat toast and peanut butter or a banana and milk.&quot; Depending on the intensity of your workout, you may need something afterward as well. A standard serving size of breakfast cereal is approximately 50 g, but depending on the cereal, that could mean a cup and a half of flakes or half a cup of heartier granola. Depending on the type of cereal you’re eating, just eyeing how much you put in the bowl, like most people do, can lead to inaccurate calorie counts. &lt;/p&gt;
&lt;p&gt;Not only that, but larger-than-life snack foods may seem like single servings even though they often contain two to three servings per packet. Buy a 16-ounce bottled Coca-Cola, and the nutrition label reads 100 calories . . . for one of the two servings in the bottle. Drink the whole thing, as many people do, and you’re really getting 200 calories. Eat the whole bag of Austin Zoo Animal Crackers, commonly found in office vending machines, and you’re getting 230 calories, nearly two servings, instead of just one.&lt;/p&gt;

Ditch the high-sugar sauce and instead spice up chicken by marinating it with cayenne red-pepper sauce, or mix hot sauce with some fat-free yogurt and smear it on your sandwich for buffalo-inspired flavor. Another way to punch up the taste and nutrient power of grilled chicken sandwiches and turkey burgers: Try a topping of homemade slaw. Bagged shredded cabbage makes a convenient base; toss it with flavored vinegar or fat-free mayo and a little mustard. At 11 calories per 1/2 cup, raw cabbage offers filling fiber and vitamins such as C and B6, and as a cruciferous veggie, it contains cancer-fighting antioxidants.&lt;/p&gt;

But major calories and saturated fat come with added ingredients such as sugary syrups, honey, whipped cream, and whole milk (1 percent and percent aren&#039;t much better). For about the same 450 calories in a large Iced Mocha Raspberry Latte at Dunkin&#039; Donuts, for instance, you can eat two slices of Pizza Hut&#039;s hand-tossed pepperoni pizza. And while honey may seem like a natural, healthier alternative to sugar, the fact is it has 21 calories per teaspoon versus sugar&#039;s 16.&lt;/p&gt;

Teas, too, come in sweet vanilla, berry, and tropical fruit blends. And whether you use Splenda, sugar, or honey in your beverages, limit yourself to about a teaspoon. &lt;/p&gt;

The diet includes many snack options, but he suggests you &quot;opt for something simple like nonfat Greek yogurt with berries or mix  nonfat Greek yogurt with a little bit of peanut butter for dipping apple slices.&quot; Another option is a miniature open-faced sandwich with high-fiber crackers instead of bread. Wasa or Ryvita are two brands Harley recommends. Just remember to skip the mayo and use naturally low-calorie mustard as your condiment of choice.  &lt;/li&gt;
&lt;li&gt;&lt;b&gt;Avoid the bloat:&lt;/b&gt; To keep your belly from pooching on your big day, Harley suggests &quot;eating foods that are really easy to digest, like smoothies.&quot; Foods to avoid? &quot;Beans and anything with a lot of roughage.&quot; It&#039;s also a good idea to minimize heavily acidic foods too.  &lt;/li&gt;
