Isn't it fabulous fun to think outside the box? Generally when making burritos I stick to the usual Tex-Mex inspired ingredients of beans, rice, and pepper jack cheese, but today I was in the mood to jazz things up a bit. Instead of using my usual chicken with tomato salsa and cilantro mixture, how about using mushrooms, green salsa, spinach, and goat cheese?

It's Friday, and I don't know about you but I've had a hard and exhausting week. Every once and awhile, on days like today, I like to reward myself with a decadent dinner. I want something easy to make but full in rich flavor that will melt in my mouth with each bite.

For a reason I can't exactly pinpoint, I've been craving sun dried tomatoes like mad lately. I blame Michael Chiarello for my sudden, inexplicable craving because I saw him making a puff pastry appetizer with the sweet tomato this weekend. My go to recipe for whenever I am in need of sun dried tomatoes is a pasta one but today I'm not in the mood for pasta, I'm in the mood for a baked strata.

Lately my dad has been into making old school classics for dinner. Dishes that he used to make thirty years ago that were delicious then and still are today. It's important to make these comforting dishes every once in a while because they bring a sense of nostalgia to the meal and so that the recipes and flavors are not lost forever.
