When I think of a deliciously comforting tomato soup recipe, the ingredients beer, blue cheese, and sriracha definitely do not come to mind. However, these out-of-the-ordinary elements are exactly why I knew I had to make this soup. Created by Iron Chef Michael Symon for Pilsner Urquell, the combination actually works — wonderfully well.

I used to shudder at the thought of chilled soups, until I tasted a cucumber-mint recipe that blew my mind. Then I realized: if I like guacamole and ceviche, why not cold avocado and seafood soups? If you can't get into cold soups, you can also make warm Summer soup using the season's freshest produce.

I'm really excited for this weekend's snow picnic! Like any sort of picnic, all of the dishes should be made in advance. Fill a large thermo with hot tomato soup and serve in mugs at the picnic destination.
