&lt;li&gt;Heat 1 tsp. oil in large skillet over medium heat. Add leek and sauté 2 minutes. Stir in beans, broth, garlic and thyme. Cover, reduce heat to low, and simmer 8 minutes. Season with salt and pepper. Transfer bean mixture to food processor and blend until creamy and smooth. Return to skillet, cover and keep warm.&lt;/li&gt;
&lt;li&gt;Heat remaining 1 tsp. oil in medium skillet over high heat. Add mushrooms and sauté 8 minutes, or until soft and brown. Season with salt and pepper, and stir in parsley.&lt;/li&gt;
&lt;li&gt;Spoon whipped bean mixture into shallow bowls. Top with equal portions of mushrooms. Drizzle each serving with 1/2 tsp. truffle oil, and serve.&lt;/li&gt;

1 tbsp Brandy&lt;br /&gt;
1 tbsp Madeira&lt;br /&gt;
2 fresh Black Truffles, thinly sliced&lt;br /&gt;
190ml/6fl.oz. Beef or Veal Stock &lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Preheat the oven to warm, 250°F.&lt;/li&gt;
&lt;li&gt;Cut the slices of bread into circles a little larger than the circumference of the beef tournedos then heat half the butter and a little of the oil in a frying pan on medium low heat, add the bread and fry until golden brown on both sides. Drain on kitchen paper and place on a heatproof serving platter.&lt;/li&gt;
&lt;li&gt;Meanwhile, heat the remaining butter and oil in another large frying pan. Season the beef with salt and pepper then add to the pan and sauté for 3 minutes on each side. Remove from the pan with tongs, place each on top of the fried bread and place in the oven to keep warm.&lt;/li&gt;
&lt;li&gt;Add the foie gras to the pan and sauté for 1 minute on each side, depending on the thickness. Remove from the pan with tongs, place once slice on each tournedos and return to the oven to keep warm.&lt;/li&gt;
&lt;li&gt;Add the port, brandy and Madeira to the pan and bring to the boil, scraping up any bits in the bottom of the pan then boil until reduced by half.&lt;/li&gt;
&lt;li&gt;Add the stock and sliced truffles, bring back to the boil and continue to boil rapidly for about 5 minutes to reduce.&lt;/li&gt;
&lt;li&gt;To serve – pour the sauce over the top of the tournedos.&lt;/li&gt;
&lt;/ol&gt;

&lt;li&gt;Heat a large fry pan over medium heat and add the butter.&lt;/li&gt;
&lt;li&gt;When the butter melts, add the sandwiches and cook until the bread is nice and toasted.&lt;/li&gt;
&lt;li&gt;Remove and slice sandwiches in half and place into four plates.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Makes 4 sandwiches.&lt;/p&gt;

&lt;p&gt;here are some simple chocolate truffles, i made them for valentines this year and they were a hit!  they&#039;ll also make great christmas goodies!&lt;/p&gt;
&lt;p&gt;Ingredients&lt;br /&gt;
center_&lt;br /&gt;
- 1 (8 ounce) package cream cheese, softened&lt;br /&gt;
- 3 cups confectioners sugar, sifted&lt;br /&gt;
- 3 cups semisweet chocolate chips, melted&lt;br /&gt;
- 1 1/2 teaspoons vanilla&lt;br /&gt;
- optional - liqueurs, other flavorings&lt;/p&gt;
&lt;p&gt;coating_&lt;br /&gt;
- 1 1/2 cups (dark, milk, or white) chocolate, melted (whatever you prefer to coat)&lt;/p&gt;
&lt;p&gt;Directions&lt;br /&gt;
1. In a large bowl, mix cream cheese until smooth. Gradually mix in confectioners&#039; sugar until well blended. Stir in melted chocolate and vanilla (To flavor truffles with liqueurs or other flavorings, omit vanilla. Divide truffle mixture into thirds. Add 1 1/2 tablespoon liqueur (almond, coffee, orange, etc) to each mixture; mix well) until no streaks remain. &lt;/p&gt;
&lt;p&gt;2. Refrigerate for 1 hour. Roll into 1 inch balls (i found it easiest to use saran wrap to assist with this).&lt;/p&gt;
&lt;p&gt;3. With a toothpick or fork, dip balls into melted chocolate, let set on wax paper.  Top with nuts, candy bits, or swirl with a different chocolate.&lt;/p&gt;
