Simple Substitution For Buttermilk

I was at my vacation house when an intense craving for homemade waffles hit. Since it was snowing heavily, we had to make waffles with the ingredients in the kitchen. The recipe called for buttermilk, and rather than find another recipe, I decided to make the simple substitution for buttermilk that is a combination of milk and lemon juice.

Here's the easy recipe:

Place a tablespoon of lemon juice in a liquid measuring cup.

Add enough milk to bring the liquid up to the one-cup line.

Let stand for five minutes. Then, use as much as your recipe calls for.

I needed two cups of buttermilk, so I started with two tablespoons of fresh lemon juice and then filled it up with milk. The waffles turned out perfectly and were insanely comforting.

Come Party With Me: Baby Shower - Dessert

After a rich, savory brunch have the young mother open up her gifts. While guests shower the lady of honor with baby toys, set up a small Belgian waffle bar. Place the batter in a pretty pitcher and plug in several waffle irons. Stack plates and arrange toppings - chocolate sauce, whipped cream, fresh berries, maple syrup, etc. - buffet style near the waffle irons. Once all the presents have been opened, invite everyone to Belgian waffles. For a more diverse spread, purchase dainty pastries from your favorite bakery. Belgian Waffles
From Food and Wine

Ingredients

1 1/2 teaspoons active dry yeast
1 cup warm water
3 cups all-purpose flour
1/2 teaspoon salt
1 cup whole milk
1 stick unsalted butter, melted
2 large eggs, separated
1/2 teaspoon pure vanilla extract
Confectioners’ sugar, for dusting
Belgian Chocolate-Fudge Sauce (recipe below), for serving

Directions

In a small bowl, dissolve the yeast in the water.
In a large bowl, stir the flour with the salt. Whisk in the yeast mixture, milk, butter, egg yolks, and vanilla until smooth.
In a medium bowl, beat the egg whites until soft peaks form. Fold them into the batter and let stand for 20 minutes.
Preheat the oven to 225°F.
Heat and grease a waffle iron. Pour 1 1/4 cups of the batter into the iron and cook until the waffles are golden, 6 minutes. Transfer the waffles to the oven. Repeat with the remaining batter.
Dust the waffles with confectioners’ sugar, drizzle with the Belgian Chocolate-Fudge Sauce and serve.

Makes 4 waffles.

Belgian Hot Fudge Sauce

1 cup heavy cream
10 ounces bittersweet chocolate, chopped
2 tablespoons confectioners’ sugar

In a saucepan, bring the cream to a boil. Remove from the heat and add the chocolate.
Let stand for 2 minutes, then stir until the chocolate is melted.
Add the confectioners’ sugar and whisk until smooth.

Makes 2 cups.

'Wich of the Week: Peanut Butter and Jelly Waffle 'Wich

Last weekend I was struck by a very intense craving for one of my nostalgic childhood foods, so I hightailed it to the grocery store to buy some frozen waffles. I've said before that some of the best sandwiches evoke memories, and this recipe goes back when I was maybe 7 or 8, and my mom fixed me some waffles before realizing we were out of syrup. She improvised to make this sandwich, and "peanut butter and jelly waffles" soon became one of my favorite meals.Like the nonwaffly version, this PB&J is very easy to make and can inspire countless variations: almond instead of peanut butter, different flavors of waffles or even waffles from scratch, honey in place of jelly, Elvis-style with bananas, and on and on. This time I used Eggo cinnamon waffles, which I highly recommend. The only requirement for this breakfast or lunch sandwich - and what sets it apart from a traditional PB&J - is using hot, toasted waffles, which melt the peanut butter in just the right warm and comfy way.

Peanut Butter and Jelly Waffle 'Wich
Original Recipe

Ingredients

2 frozen waffles, plain or flavored
2 tablespoons creamy peanut butter
2 tablespoons jelly of your choice

Directions

Toast waffles in toaster on high, until they are medium brown.
On one waffle, spread the peanut butter, making sure to fill in the square indentations. On the other waffle, spread the jelly.
Place the peanut butter and jelly sides together, cut in half, and serve immediately.

Makes 1 sandwich.

While I absolutely adore toast, I definitely have a special place in my heart for waffles. If I have to choose between waffles and pancakes, waffles definitely win. I love the crispiness of the edges, and the way they cradle the syrup in their crevices.

Batter Blaster Blasts Away My Expectations

I was perusing the dairy section of my local Whole Foods Market when something caught my eye. There, on the top shelf, glinting like a jewel, was Organic Batter Blaster. At first I thought, WHAT??? WHY IS THIS HERE? I thought Batter Blaster would end up as one of those weird products - like HeadOn - that you hear about but never see. Then, once the shock wore off, I remembered that I was at Whole Foods, and that they have a pretty high standard when it comes to products they sell. So I did what every other foodie would have done: I picked up a can and put it in my cart.

Let me say right now, this product is surprisingly good. I was highly skeptical, and a bit worried by it, however, in the end it won me over. The batter itself oozes out of the can - I was expecting more of a high-powered spray like whip cream - and is a little difficult to shape, but not impossible. The flavor is like your standard fluffy pancake, only a tad sweeter. I've definitely had much, much worse at diners across America.

Would I buy this product again? Probably not, however I could see where it would come in handy. In just a few short minutes, we were eating our fill of pancakes. If I were a hungover college student or a busy mom, and just wanted to have decent tasting pancakes for myself or my brood, then it would definitely make sense. The ingredient list didn't look too weird - the first two ingredients are filtered water and organic wheat flour - they were super simple to make, and as the checkout guy at Whole Foods said, "Hey, sometimes you just want one pancake."
