Hungry Planet: What the World Eats

Today is National Hunger Awareness Day and so I thought I'd tell you about this great book called Hungry Planet: What the World Eats by Peter Menzel and Faith D'Aluisio. It's a fascinating coffee table book with portraits of families, surrounded by the food they eat during the course of a week. It's amazingly thought-provoking (compare the Californian family to say, the family in Bhutan or Chad) and wonderfully interesting. There are 30 families in 24 countries, and each of them are profiled with a small story, a full shopping list (with prices) and a family recipe. If you get a chance, I highly recommend that you spend some time with it. It's available for $40, but you can probably find it at your local library. I've included some of the photos in the book, click on each one for more information (including location and money spent on food per week).

Burning Question: What's the Difference Between Stuffing and Dressing?

It's arguably the standout dish at Thanksgiving, yet at the same time shrouded in ambiguity. What's the proper way to refer to it: stuffing or dressing? Is there even a distinction?

Some believe that if it's cooked inside a roast, it should be dubbed stuffing; if it's prepared outside the bird, then the proper name for it is dressing. But go south of the Mason-Dixon line, and cooks will call it dressing, regardless of whether its preparation, citing the term "stuffing" as an unpleasant-sounding word. Likewise, northern states and New Englanders generally refer to the dish as stuffing across the board.

So, much like the soda-pop debate, whether you term that beloved side of seasoned starch and vegetables stuffing or dressing is really a matter of where you're eating. But we can all call it one thing for sure: delicious.

I must admit: I'm not the world's biggest fan of cheesecake, it's always seemed a bit too rich. But I'm obsessed with red velvet cake, and was intrigued when I first heard about red velvet cheesecake. Kobayashi Dethrones Chestnut to Become Krystal King

Takeru Kobayashi continues to beef up his competitive eating record. Yesterday, the Japanese speed-eating demon defeated two-year reigning champion Joey Chestnut in the Krystal Square Off World Hamburger Eating Championship in Chattanooga, TN. Before a live televised audience and a crowd of 10,000, Kobayashi crushed the competition by eating 93 Krystal hamburgers in eight minutes over Chestnut's 81. In addition to reclaiming the title, which he's taken four out of six years, the Japanese victor also won $20,000. Although Chestnut won the Square Off last year with a record of 93 hamburgers, Kobayashi set a new standard by adhering to the contest's new rules. This year, Krystal imposed a "no dunking" rule, which prevented eaters from dipping their burgers in liquid. The competitors were also given five Big Angus Burgers at the start of the competition, each equal to five Krystal burgers in size. While I find competitive eating horrifying, I am still in awe of Kobayashi's accomplishment. I don't think I've ever eaten more than a large cheeseburger in one sitting. Would You Drink Kopi Luwak Coffee?

In honor of today being National Coffee Day, I thought I'd ask all you coffee lovers out there how far you'd go for a good brew. At more than $100 a pound, kopi luwak, also known as civet coffee, likely takes the title of the world's most expensive coffee. But it also holds the title of world's only twice-consumed coffee.

Before you've enjoyed it, it's been consumed by the palm civet, a cat-sized mammal native to Southeast Asia. The civet, or luwak, eats fresh coffee berries, which are collected by coffee specialists after they've been excreted. The beans are then washed in spring water and sold as coffee.

According to civet coffee connoisseurs, the animal's digestive enzymes help to mellow out the acidity, causing it to taste mild and smooth. I think I could give it a try - so long as you didn't tell me what it was first. What about you? Have you ever tried civet coffee?

Ming Tsai on Best Meals, Food Politics, and What's Next

If it hasn't become apparent over the last few days, I'm an enthusiastic fan of Ming Tsai's. Last week, the Simply Ming chef stopped into San Francisco to host a party for the Macy's Come Together campaign. While demonstrating how to make potstickers, Ming, an exceptional storyteller, made fun of his parents who were present in the audience, told tales of mischief in France's Michelin-starred restaurants, and recalled his win against Bobby Flay on Iron Chef America ("rumor has it that I may soon face off against Iron Chef Morimoto," he told the crowd).

Top Chef Vegas: Episode 5

In what may be the world's first pairing of chuck wagons and ceviche, the Top Chef gang went camping this week. In 100-plus degree heat on a dusty dude ranch, the chefs prepared meals over fire pits for a group of hungry ranchers. It looked simultaneously horrible and highly entertaining.
