INGREDIENTS
2 cups all-purpose flour
1 cup shortening
1/2 cup cold water
1 pinch salt
2 cups pitted sour cherries
1 1/4 cups white sugar
10 teaspoons cornstarch
1 tablespoon butter
1/4 teaspoon almond extract
DIRECTIONS
Cut the shortening into the flour and salt with the whisking blades of a stand mixer until the crumbs are pea sized. Mix in cold water. Refrigerate until chilled through.

The weather in So-Cal is so bizarre this week...it has gone from 100 degrees to cold and rainy. When I let the dogs out this morning, I quickly realized that I would need a coat.

I hope everyone had a nice holiday. I had the honor of cooking dinner for a small group of four people. The meal was vegetarian (actually vegan, except for one dessert), mostly organic, with no added sugar and nothing refined.

Easy ! all you need is:
2 cans of Comstock Cherrie pie filling mix
1 can of Drained Pineapple
1 box of White Cake Mix (I use more that 3/4s of the cake mix, it is up to you)
Nuts if desired
1 Stick of Margarine
Square cake pan
1) Rub a little margarine on bottom of cake pan
2) Dump one can of cherry pie filling mix in cake pan
3)Dump one can of drained pineapple on cherry pie filling
4)Dump 2nd can of cherry pie filling on top
5)Dump box of cake mix (DRY) over the whole thing as a crust
6)pour one stick melted butter over the white cake mix evenly
7)sprinkle nuts on top if desired
Bake a 350 for about 40 minutes until crust browns.

Before my sister was diagnosed with Breast Cancer my dad's youngest sister died of Breast Cancer.
She died one week before my sister's regularly schedule pap and mammo.
My sister found out she had breast cancer two weeks after my aunt died.
