White Bean Escarole Soup
adapted from Enchanted Broccoli Forest by Mollie Katzen
The recipe calls for escarole, but you can substitute any green - spinach, kale, chard, collards - or a combination. You can use canned white beans (2 15-oz. cans, rinsed thoroughly) or dried beans (start with 1-1/2 cups).

Sautéed Escarole

What you need:
1 to 2 tablespoons olive oil
3 garlic cloves, peeled and smashed
1 pound of escarole (2 small heads or 1 large head), well washed and leaves torn
coarse salt
What you do:
Peel and smash garlic and let sit for 10 minutes to allow its cancer fighting enzymes to release.
Heat olive oil on medium heat. Add garlic and cook until fragrant, about 3 minutes.
Add escarole and season with salt. Cook stirring often, until tender, about 10 minutes.

2 large heads escarole (about 32 cups), cored and coarsely chopped
1/4 cup olive oil
4 cloves garlic, minced
4 anchovies
1/2 cup pitted kalamata olives, coarsely chopped
1/4 cup golden raisins
Coarse and freshly ground black pepper
Pinch of crushed red pepper (optional)
All-purpose flour, for work surface
Herbed Pâte Brisée
1 large egg, lightly beaten
1. Preheat oven to 425°. In a large skillet, cook escarole, covered, over medium heat until wilted, about 8 minutes.

I love making soup in the winter, and Italian Wedding is one of my favorites.
INGREDIENTS:
MEATBALLS -
1 lb. meatloaf mix (combination ground beef, pork, and veal)
1/4 cup bread crumbs
1 egg
1 tbsp parsley, finely chopped
1 clove garlic, minced
salt and pepper to taste
SOUP -
4 cups chicken broth
1 large bunch escarole, chopped
1/4 cup grated Pecorino Romano cheese
1 carrot, grated
1/2 medium onion, chopped
1 bay leaf
2 celery ribs, finely chopped
2 tbs olive oil
1 small box pastina (any tiny pasta will do)
INSTRUCTIONS -
Bring a large pot of salted water to a boil.

Italian Wedding Soup Recipe #14061
1/2 lb lean ground beef
1 egg, slightly beaten
2 tablespoons breadcrumbs
1 tablespoon parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon onion powder
5 3/4 cups chicken broth
2 cups chopped escarole or spinach
1/2 cup orzo pasta, uncooked
1/3 cup finely chopped carrots
grated parmesan cheese
1. In medium bowl combine, meat, egg,bread crumbs, parmesan cheese, basil& onion powder; shape into 3/4" balls.
