Partysugar posted Fast and Easy Dinner: Beef and Potato Burritos last week and I thought it looked so delicious, so I made it a few nights ago for dinner.
Cooking the diced potato
Chopped onion and jalapeno
Potato, ground beef, onion and jalapeno cooking up
Added the tomatoes, paprika, cumin and salt
simmer down now...
Layering sour cream on the tortilla
Added the meat and potato mixture
Added cheese, cilantro and a squeeze of lime
Rolled it all up, garnished with a lime wedge and served it to a very happy husband.

Here is a recipe for Salmon that is good and easy! I am going to write this as if I were cooking for 4, but you could easily make it for 1 by cutting down on the ingredients.
3 points for one 4oz fillet with tomato topping
What you need:
4 4oz Salmon fillets (I use frozen fillets that come to 2 points per oz cooked)
1 Can chopped tomatoes (fresh can work but the canned adds something)
2 Scallions finely sliced
1TBS Olive Oil
1tsp Oregano
1tsp Thyme
2TBS Lemon Juice
Salt and Pepper
4sheets Aluminum Foil (Big enough to form a packet around each piece of fish)

1.) Mix Olive Oil with a dash of both the Salt and Pepper in a bowl
2.) Coat each Salmon fillet with olive oil mixture/ let sit
3.) In a separate bowl combine the Tomatoes, Scallions, lemon juice and remaining spices
4.) Place each Salmon fillet on one of the aluminum sheets/ form foil into a packet without closing all the way
5.) Spoon Tomato mixture over each fillet/ sealing the packets when finished and placing them on a baking sheet (packets may leak a little)
6.) Bake at 400 for 25mins or until fish fakes easily with a fork
This comes out really nicely and goes well with rice or a vegetable like asparagus

Chicken SaladMy B-friend eatting and LOVING the chix salad!! :-)This is one of my b-friends fav and it's SO easy and tasty! I make a very simple version, however, I'm sure you can add other ingredients.

I've been trying to incorporate more fish into my dinner time plans (I've heard it's good for migraines, plus just plain good for you), so last night I decided to take a different approach in how to cook it. Lately, I've been all about salmon, but we've just been marinating it overnight and then grilling it. Which, by the way, is delicious and quick, but still, I wanted something a little different and where I'm less likely to burn myself.

Here’s what happens when a dude finally watches "Twilight."
As you may have heard once or twice over the past couple days, "Twilight" came out on DVD over the weekend. Since I live in a house with four women and zero dudes, unless you count the cats, this was considered to be something of a watershed moment in my household.

Three years ago I met a guy at the bar. We had an instant sexual chemistry, and I ended up going home and having sex with him that first night. We never exchanged contact information, and I left his place very early in the morning before he even woke up, so there would be no awkward goodbyes or anything.

Since it's Thanksgiving and all, I thought I'd post pictures of some of the recipes from the Kitchen Goddess Group that I have made and loved in the past few months. And I also want to say thank you to all of the Kitchen Goddesses in this group that have given me inspiration and a bigger belly in the past few months! :medal: Every week I get some really great recipes in this group and without you I'd often be clueless as what to make for dinner.
