 <title>Very easy alfredo sauce</title>

I always thought Alfredo sauce would be difficult to make.  I was really surprised at how easy this was.  &lt;/p&gt;
&lt;p&gt;It is very rich, very fattening, and tasted soooooooooooo yummy.  I got the recipe from my Southern Living Everyday Menus cookbook.  &lt;/p&gt;
&lt;p&gt;3 oz finely shredded Parmesan cheese&lt;br /&gt;
1/2 cup butter or margarine melted&lt;br /&gt;
1/2 cup whipping cream&lt;br /&gt;
2 tbsp chopped fresh parsley&lt;br /&gt;
1/4 tsp ground white pepper&lt;br /&gt;
Hot cooked linguine or fettuccine&lt;/p&gt;
&lt;p&gt;Combine the first 5 ingredients and toss with hot cooked pasta.  The heat from the cooked pasta will melt the cheese.&lt;/p&gt;

&lt;i&gt;Rinse these very well and dry dry dry dry them well&lt;/i&gt;&lt;/p&gt;
&lt;p&gt;2)&lt;b&gt;Chopped Garlic&lt;br /&gt;
 - 1/2 Medium Onion sliced&lt;br /&gt;
 - 2/3 Raw Sliced Mushrooms&lt;/b&gt;&lt;br /&gt;
&lt;i&gt; Dry sauté these in a frying pan on medium (or nuke in a microwave for 2-3 minutes) till fully cooked and then toss the pasta in to heat up and dry up some of liquid. Heat till warmed.&lt;/i&gt;&lt;/p&gt;
&lt;p&gt;3)&lt;b&gt;2/3 Chopped Frozen Broccoli&lt;/b&gt; (nuked in the microwave for 2 minutes)&lt;b&gt;&lt;br /&gt;
 - 1 Laughing Cow Cheese - Light N Creamy Wedge&lt;br /&gt;
 - 4 1/2 tbsp Fage Total 0% Greek Yogurt&lt;br /&gt;
Favorite Seasonings (Pepper, Garlic powder, etc)&lt;/b&gt;&lt;br /&gt;
&lt;i&gt;Mix the brocco and the cheese and fage yogurt together till creamy. Season to your liking.&lt;/i&gt;&lt;br /&gt;
I try to keep the sodium at a minimum so I use no salt seasonings&lt;/p&gt;
&lt;p&gt;&lt;i&gt;Toss everything together and top with 1 sliced&lt;/i&gt; &lt;b&gt;Morningstar Farms- Breaded Chicken Patties&lt;/b&gt;&lt;br /&gt;
Without the chicken patty it&#039;ll be like 13g carb per serving and lower sodium. Buuuut i love these patties, makes me think I&#039;m eating chicken parmigiano.&lt;/p&gt;
&lt;p&gt;Filling and DEeeeelicious!&lt;br /&gt;
Feel free to add some parmesan to yours &lt;/p&gt;

 <title>The New Fettuccine Alfredo</title>

I can&#039;t remember where I found this recipe, but I&#039;ve had it for years.   I recently made it again and now it&#039;s easily a favorite around my house!&lt;/p&gt;
&lt;p&gt;1 1/2C balsamella sause (recipe below)&lt;br /&gt;
3/4 lbs fettuccine, cooked and drained&lt;br /&gt;
1/4C finely chopped parsley&lt;br /&gt;
nutmeg&lt;br /&gt;
black pepper&lt;/p&gt;
&lt;p&gt;Sauce:&lt;br /&gt;
3C plain soy milk&lt;br /&gt;
3 cloves garlic, crushed&lt;br /&gt;
2 small bay leaves&lt;br /&gt;
2 1/2 Tbs Smart Balance Buttery Spread&lt;br /&gt;
1/3C flour&lt;br /&gt;
pinch salt&lt;br /&gt;
nutmeg&lt;/p&gt;
&lt;p&gt;In a sauce pan, combine soy milk, garlic and bay leaves over medium heat.  Do not boil.  Cover and remove from heat and let stand 15 mins.  Strain and discard solids.  In a clean saucepan, melt butter, add flour and whisk 2 mins, until blended.  Do not scorch!!  Add strained milk slowly and cook until thick--about 5 mins.  Add salt and nutmeg to taste.&lt;br /&gt;
Toss with cooked pasta and top with parsley, nutmeg and pepper.&lt;/p&gt;
&lt;p&gt;**If you&#039;d like to add cheese, I would go with a grate-able goat cheese, or Rice parmesan cheese.&lt;/p&gt;

 <title>Fettuccine Alfredo</title>

&lt;p&gt;Salt&lt;br /&gt;
2 heads garlic&lt;br /&gt;
Pepper&lt;br /&gt;
Olive oil spray&lt;br /&gt;
8 ounces fettuccine&lt;br /&gt;
1 cup chicken stock&lt;br /&gt;
1 cup non-fat half-and-half&lt;br /&gt;
1/2 cup grated Parmesan&lt;br /&gt;
1/4 cup chopped parsley leaves&lt;/p&gt;
&lt;p&gt;Preheat the oven to 450 degrees F.&lt;br /&gt;
Fill a 4-quart pot with water and bring to a boil. Season water with salt. &lt;/p&gt;
&lt;p&gt;Cut the first 1/2-inch off the top of the heads of garlic to expose all of the cloves. Place garlic heads in the center of a piece of aluminum foil. Sprinkle exposed cloves with salt and pepper, mist with olive oil spray, and then wrap up in aluminum foil. Roast for 45 minutes, and then allow to cool. &lt;/p&gt;
&lt;p&gt;Cook pasta according to package directions until al dente. Meanwhile, squeeze cooled roasted garlic cloves into a small saucepan, add chicken stock, and heat over medium heat. With an immersion blender, puree garlic and stock. Simmer until reduced by half. Add half-and-half and simmer until thick. Add Parmesan and blend again with the immersion blender. Taste and adjust seasoning with salt and pepper. Add noodles to pan with sauce and toss to coat. Divide pasta among plates and garnish with parsley. &lt;/p&gt;

Here is a recipe I wanted to share; I found it in a Philadelphia Cream Cheese cookbook. Fettucine alfredo is my favorite meal, and I love this recipe! &lt;/p&gt;
&lt;p&gt;INGREDIENTS:&lt;/p&gt;
&lt;p&gt;1 (8 ounce) package Cream Cheese, cubed&lt;br /&gt;
1 cup Grated Parmesan Cheese&lt;br /&gt;
1/2 cup butter or margarine&lt;br /&gt;
1/2 cup milk&lt;br /&gt;
8 ounces fettuccine, cooked, drained &lt;/p&gt;
&lt;p&gt;DIRECTIONS:&lt;/p&gt;
&lt;p&gt;Stir cream cheese, Parmesan cheese, butter and milk in large saucepan on low heat until smooth.&lt;br /&gt;
Add fettuccine; toss lightly. Serve with additional Parmesan cheese, if desired. &lt;/p&gt;
&lt;p&gt;*note: Feel free to tweak - this one is pretty hard to mess up! I almost always add more cream cheese, and I also love to shake in some Italian spices like garlic, oregano, rosemary, etc. McCormick brand has a great Italian seasoning grinder that adds a lot of extra flavor. Also, sometimes I&#039;ll get the shredded 3 and 4-cheese Italian blends rather than just Parmesan alone.  Enjoy!&lt;/p&gt;
