OK girls. I tried to find two easy and healthy recipes that are great for the summer. I thought that a fish dish would be awesome and you can't go wrong with a good steak on the BBQ.

You can make the salsa separately and serve with pork or with a white fish like halibut.
Serves: 4; Prep Time: 22 minutes; Cook Time: 6 to 8 minutes
Ingredients:
1 large lemon
3 teaspoons honey
2 teaspoons minced garlic
3 teaspoons extra-virgin olive oil, divided
½ teaspoon salt
¼ teaspoon freshly ground pepper
4 (4-ounce) skinless, boneless chicken breasts, about 1 pound
2 cups diced strawberries
2 ripe medium peaches, peeled and diced
¼ cup minced red onion
½ cup diced red bell pepper
2 teaspoons minced jalapeño chili
Directions:
Preheat grill or broiler. Zest lemon to make about 1 teaspoon; set aside.

This is a light-but-not-skimpy dish at Miraval, a health resort where guests dine for healthy dishes like the one above.
Prep: 15 min; Cook: 30 min
Ingredients:
2 tsp canola oil
1 16-20 oz wild salmon fillet, skinned
2 Tbsp chopped red bell pepper
2 Tbsp chopped celery
2 Tbsp thinly sliced scallions
2 tsp chopped cilantro
2 c cooked brown rice
4 c vegetable broth
4 bunches baby bok choy, sliced in half
1/2 c pineapple sauce Pineapple sauce
1/2 tsp chopped shallots
1/2 red bell pepper, chopped
1/4 fresh pineapple, cored and chopped
1/2 tsp minced fresh ginger
2 Tbsp brown sugar
2 c pineapple juice
1 Tbsp rice-wine vinegar
Directions:
Heat grill and preheat oven to 350ºF. Brush 1 teaspoon oil on salmon and season with salt and pepper to taste.

Last night was quick and easy night at our house. I love fish night...I can whip something up in about 20 min and it's good for you food! We usually try to do fish night at least once per week.

I enjoy tilapia because it's a light, flaky white fish that doesn't count you an arm and a leg like most seafood. I love seafood, but I often find that it just doesn't fit into the budget like I wish that it would. So, in this case, I squeeze it in by adding some pantry staples.

My husband and I got really fed up of looking for an apartment, so today we went for a walk around Bergen (Norway) to discover our new hometown. I had been to the port a few times already but always at night, so I always missed the fish market. I had read that the fish market was great, but never thought it would be that great.

Roasted Red Pepper Dip - Serves 8 as an appetizer
Original recipe from Whole Foods.
Try this alternative to the usual hummus. Muhammara is a delicious Syrian recipe for a spread of roasted red peppers, toasted walnuts and a touch of spice, offset by pomegranate molasses.

Redbook madras chickenYesterday, I spent 1 1/2 hours in a prep kitchen preparing my family meals. I prepared six servings of the following dishes and this will feed my family until the first week in October! Using the prep kitchen and freezing my meals makes it easier for me to work my crazy hours and still come home and cook (which I love to do).

THAI GRILLED CHICKEN
5 T fish sauce (nam pla or nuoc mam)
¼ cup light brown sugar
¼ cup canned unsweetened coconut milk (in the Asian food section NOT the section where they have stuff for mixed drinks )
3 T lime juice
2 T five-spice powder
2 T soy sauce
1 T crushed red pepper
1 T plus 1 teas curry powder
chicken parts
mix all the ingredients together well then transfer to a Ziploc bag with the chicken. Marinate at room temp for a couple of hours then, marinate in the fridge for 24 hours. Chicken can be grilled or broiled.
