I haven't made a Happy Hour post in a long time so I decided to share a recipe for peach gelato with you all. It's the season, after all!

Peach Ice Cream Sandwiches With Ginger Cookies

For ice cream:
5 large ripe peaches (about 2 pounds)
4 teaspoons freshly squeezed lemon juice
1 3/4 cups sugar
2 tablespoons peach schnapps*
2 1/4 cups milk*
2 2/3 cups heavy cream
8 large egg yolks
1 pinch of salt
1 teaspoon pure vanilla extract
For cookies:
5 tablespoons unsalted butter, room temperature
1 cup sugar
1/2 teaspoon pure vanilla extract
4 large egg whites, room temperature
1 cup sifted all-purpose flour
Pinch of salt
2 teaspoons ground ginger
1 tablespoon minced crystallized ginger*
Make ice cream: bring a large saucepan of water to a boil. Meanwhile, prepare an ice-water bath; set aside.
Place peaches in boiling water for 1 to 2 minutes; remove with a slotted spoon, and cool in ice-water bath.
Peel and pit peaches, reserving skin and pits. Slice each peach into 10 wedges, place in a nonreactive saucepan, and stir in lemon juice and 2 tablespoons sugar.

2 3/4 cups cake flour
1/4 cup sugar, plus additional to sprinkle on top
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon salt
10 tablespoons chilled unsalted butter, cut into 1-ounce pieces
1 cup heavy cream, plus additional to brush on top
3 pints fresh strawberries, stemmed
2 or 3 tablespoons sugar
1 tablespoon lemon juice
2 teaspoons kirsch
1 teaspoon orange zest
Strawberry Swirl Ice Cream, recipe follows
Preheat the oven to 350 degrees F. Line 1 or 2 baking trays with parchment paper and set aside. In a food processor, combine the flour, 1/4 cup sugar, baking powder, and salt and pulse to combine.

Okay, partysugar posted this recipe about making peach ice cream like 2 months ago, and I made it the next day, but I haven't been able to get the pictures off of my camera until today, so here they are. Better late than never I suppose! :OY:
boiling the peaches in water
cooling the peaches in an ice water bath
softening the peaches in sugar and lemon juice
Infusing the milk and cream with peach skins and pits
Egg yolks, sugar, and vanilla mixture
Yes, it's true, my kitchen is filthy.

Cherry Chocolate Ice Cream & Almond Puff Pastry Sandwiches
Modified from Batch Family Mountain and Epicurious
For the ice cream:
1 1/2 cups sliced Bing, Lapin or Sweetheart cherries
1 pint whipping cream
1 pint half and half
2 egg yolks
1/2 cup white sugar
1/2 teaspoon vanilla
1/2 cup shaved dark chocolate (or to taste)
For the puff pastry:
1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
3 tablespoons sugar
1 cup sliced almonds (I was lazy and processed mine in a food processor)
1 large egg white
Whisk whipping cream, half and half, egg yolks, sugar and vanilla in a mixing bowl until sugar is dissolved. Add cherries and stir. Chill mixture for 30 minutes in freezer.
Meanwhile make the puff pastry: preheat oven to 400°F.
