My boyfriend thinks I'm crazy, so I need some validation here.
I think that Ina Garten, of "The Barefoot Contessa" looks like an older, heavier version of Ellie Krieger of "Healthy Appetite with Ellie Krieger." Seriously, I think Ina could be Ellie's mother.

I made my dad chocolate pudding this weekend because he has been eating so much Jello pudding lately that I thought it was time to treat him with the real thing. This pudding is simple to make, especially if you have experience making custards or ice creams as it follows a similar technique. The pudding is rich and thick, mousse-like.

This recipe comes from Ina Garten and it's very easy to put together. I made it around the holidays when I felt the need for an extra vegetable, but still wanted to keep things a little bit more rich and special.

Sun Dried Tomato Dip
Modified from Ina Garten
1/4 cup sun-dried tomatoes in oil, drained and chopped (8 tomatoes)
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise
10 dashes, hot red pepper sauce
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup fresh basil, torn into pieces
Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade.Add the basil and pulse twice. Serve at room temperature with crackers, croutons, pita crisps, or flatbread.
Makes 2 cups.

Yesterday, I had a crummy, stressful day at work. It was one of those days when the higher-ups are freaking out about an impossible deadline at the end of the week, getting everyone else all stirred up and anxious, only to find out later that the deadline is actually two weeks away. It was frustrating and tiring.

Yesterday while I was visiting the Fancy Foods Show with YumSugar we interviewed Barefoot Contessa! It may sound crazy but I was more star-struck than when I worked for Seal. The Show was gigantic with yummy food to taste everywhere and I was starting to feel overwhelmed when I looked up and noticed the cutest little mini cupcakes.

Chopped Liver Pate Spread
From Ina Garten
2 pounds chicken livers
1 cup rendered chicken fat
2 cups medium-diced yellow onion (2 onions)
1/3 cup Madeira wine
4 extra-large eggs, hard-cooked, peeled, and chunked
1/4 cup minced fresh parsley leaves
2 teaspoons fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Pinch cayenne pepper
Drain the livers and saute them in 2 batches in 2 tablespoons of the chicken fat over medium-high heat, turning once, for about 5 minutes, or until just barely pink inside. Don't overcook the livers or they will be dry. Transfer them to a large bowl.In the same pan, saute the onions in 3 tablespoons of the chicken fat over medium-high heat for about 10 minutes, or until browned.Add the Madeira and deglaze the pan, scraping the sides, for about 15 seconds.

This is a slight variation on a recipe by Ina Garten, from her book, Barefoot Contassa Family Style. The mint leaves really add a blast of surprising freshness. I don't always make it with chicken though, but either way it is a delicious main-dish salad.
