Here’s one pasta dish with cream sauce that won’t blow your diet.
Serves: 4; Prep Time: 10 minutes; Cook Time: 18 minutes
Ingredients:
3 cups reduced-sodium chicken broth
1 1/3 cups (about 8 ounces) orzo
1 tablespoon olive oil
1/2 cup chopped onion
2 1/2 cups (about 3/4 pound) asparagus, trimmed and cut into 1-inch pieces
1/2 cup reduced-fat sour cream
1/2 cup (1 ounce) julienned prosciutto
1/2 teaspoon freshly ground pepper
1 tablespoon chopped fresh Italian (flat-leaf) parsley
1/4 cup grated Parmesan cheese
Directions:
In a medium covered saucepan, bring broth and 1 cup of water to a boil over high heat. Add orzo, then return to a boil.

I made this delicious summer salad over the weekend, my second try at it, and wanted to share with everyone.
Shrimp and Orzo Salad
12oz orzo
1 lb cooked shrimp, tails removed (I cut my shrimp in half)
1 container grape tomatoes, halved
1/2 bunch of flat leaf parsley, chopped
Zest of one lemon
Juice of two lemons (or three depending on your tastes)
Olive oil...around 1/3 C but use as much (or as little) as you like
Salt and Pepper as desired
Cook orzo until al dente, about 8 min. Rinse with cold water and drain well.

I went to a bbq last night and was asked to bring a side dish. I had recently been watching Giada on Everyday Italian and she made this salad that looked amazing and I decided to make it with just a small change.
1 pound orzo pasta
3 tablespoons extra-virgin olive oil, plus 1/4 cup
2 cups fresh arugula (about 3 ounces) (I couldn't find arugula in my grocery store so I used baby spinach instead)
3/4 cup crumbled ricotta salata cheese (or feta cheese) (amazingly I was able to find this cheese!

This can be a budget light main dish or a tasty side dish for a bigger meal. Cost of this dish: $3.41 - Serves 4.
Try experimenting by adding or substituting your favorite veggies!

Italian Wedding Soup Recipe #14061
1/2 lb lean ground beef
1 egg, slightly beaten
2 tablespoons breadcrumbs
1 tablespoon parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon onion powder
5 3/4 cups chicken broth
2 cups chopped escarole or spinach
1/2 cup orzo pasta, uncooked
1/3 cup finely chopped carrots
grated parmesan cheese
1. In medium bowl combine, meat, egg,bread crumbs, parmesan cheese, basil& onion powder; shape into 3/4" balls.

I somehow fit this in my schedule last night. Super easy, tasty and healthy. I prepared Trader Joe's Harvest Grains blend (Israeli Couscous, red quinoa, orzo etc., my family loves it) along side it as well as a HUGE green salad.
