breakfast- two jap buns ( blueberry and pumpkin)+coffee
lunch- one big bowl of fruit pebbles with milk + yoghurt with 5 digestive biscuits + one jap cheese bread +vitagen + one fruit + one kiwi + 2 slice of chocolate cake + cheese bread
dinner - fried beehoon about 3 plate + dishes and fruits.
scary!?

I got this recipe from Kraft Foods magazine, but I made some adjustments. For being dairy-free, it turned out great!
1 can canned pumpkin
1 cup plus 2 Tbs granulated sugar, divided
1/2 C firmly packed brown sugar
3 egg whites
1/2 C fat free milk (I used soy milk)
1/4C canola oil
2 C flour
2 1/2 tsp baking powder
2 tsp pumpkin pie spice (1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp ground nutmeg and 1/8 tsp all spice--combine and then measure out 2 tsp)
1/4 tsp salt
1 pkg (8oz) Neufchatel cream cheese (I used Tofutti Cream Cheese)
Preheat to 350.

I am not a very accomplished cook, and I certainly don't consider myself a seasoned baker. However, I found an incredibly simple bread recipe for a bread that met all my nutritional standards. It's made primarily from spelt flour which is far more nutritious than wheat (and not refined), and contains no yeast.

I was given the honor of cooking Thanksgiving dinner for my family this year. It was only three of us so it wasn't a huge challenge, but still a fun project!
This meal is pretty similar to my Halloween Dinner, but the food was such a success I had to make it again.

This should really be titled "Cleaning Out My Fridge Meat Loaf Muffins", but hey, the pumpkin title sounds better. It's getting colder here in New England which makes me crave down home comfort food. My usual go-to food is mac and cheese, but I didn't feel like spending the time on that last night.

'tis the season for fantastic food
and can i say how much i absolutely love it when the best thing that i have eaten in recent memory is something that i actually made myself?
granted, that's not the biggest accomplishment ever. because i naturally will know what i expect to enjoy before choosing a recipe.
