I had to share this recipe with all of you kitchen goddesses. I recently made it and never in my life have I seen a four layer cake eaten so quickly. It was gone 48 hours after I removed it from the oven.

I baked this cake, as well as a red velvet cake with white chocolate and chocolate buttercream frosting for a friend's birthday... unfortunately I got to taste neither of them, although I heard they were quite tasty (I got a MONETARY offer to bake the red velvet for another party... of course I wouldn't charge for it!)
SO, we start out with these ingredients:
1/2 cup butter, room temp
1 1/4 cup brown sugar splenda/ brown sugar
2 eggs
1 cup pumpkin pie filling
1 teaspoon vanilla extract
2 cups cake flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup buttermilk
(Preheat to 350) As for most recipes, you just mix the flour together with the other dry ingredients, excluding the brown sugar.

Pumpkin Cake/Bars
2 Cups white sugar
4 Eggs
1 Cup of oil
1 teaspoon vanilla
Mix first 4 ingredients well
Blend in 2 cups pumpkin
Sift together the following ingredients:
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon salt
Sift into pumpkin mixture, and mix together thoroughly
Grease and flour either a 9X13 Baking pan or Jelly roll pan(for bar type)
Spread batter evenly into pan
Bake at 350 degrees or until done (9X13 pan will take a little longer)
Icing
1 250 gram package of cream cheese
1 teaspoon vanilla
1/2 cup margerine or butter
2 cups icing sugar
Combine ingredients and blend well
Spread over cooled pumpkin cake

I made this last year and it was really good. Mine did not look like the picture. I did not know you are supposed to slice the top of the piece that goes on the bottom.

My mom found this recipe in Sunset magazine about four years ago and we have been making it every Thanksgiving since! Let me tell you, I look forward to Thanksgiving every year for this cake! Its REALLY good!

breakfast- two jap buns ( blueberry and pumpkin)+coffee
lunch- one big bowl of fruit pebbles with milk + yoghurt with 5 digestive biscuits + one jap cheese bread +vitagen + one fruit + one kiwi + 2 slice of chocolate cake + cheese bread
dinner - fried beehoon about 3 plate + dishes and fruits.
