Ricotta Cheese and Arugula Omelette
Ricotta and Arugula Omelette
Ingredients
4 large eggs, divided
4 tablespoons cheese, part skim ricotta, divided, plus more for garnish
1 tablespoon herbs, mix of fresh tarragon, mint, chives, cleaned, chopped, divided
salt & pepper
1 cup arugula, baby, triple-washed, packed, divided
2 teaspoons cheese (Locatelli), pecorino romano, grated, divided
1 tablespoon oil, extra-virgin olive, divided
chives, fresh, cleaned for garnish
Combine 2 eggs, ½ tablespoon of the ricotta, ½ tablespoon of the herbs, and a little salt and freshly ground pepper, in a big bowl. Whisk well.
Heat half of the olive oil in anon-stick pan over medium heat.

Mmmm Sunday morning pancakes!!
I am really looking forward to making these this weekend!! I am really willing to try anything and I love having pancakes on Sundays as a nice treat after a long run!

Roasted Fall Veggie & Ricotta Pizza
INGREDIENTS:
*Olive Oil, for baking & drizzling
*Flour, for dusting
*1 pound store-bought pizza dough, fresh, or thawed if frozen
*8 oz. part-skim mozzarella cheese, grated (about 2 cups)
*1 cup part-skim ricotta cheese
*1 TBSP fresh rosemary leaves, (optional)
*Coarse salt and ground pepper
*6 Cups roasted fall vegetables (butternut squash, red potatoes, onions, carrots & garlic)
METHOD:
1. Preheat oven to 475 degrees.

I watched Giada make this yesterday and it looks so easy and good.
1/2 cup sugar
1/2 vanilla bean
1 (15-ounce) container ricotta cheese
1/2 tablespoon instant espresso powder
1 (3-inch) biscotti, crushed
Pinch ground cinnamon
Pinch cocoa powder
Place the sugar in a food processor. Cut the vanilla bean open lengthwise, scrape out the seeds, and place them in the food processor with the sugar.

I'm going to preface this recipe with a tiny, tiny warning: I have no idea what this tastes like, no idea if it's good, and don't ever expect me to make it.
I don't do mayo and I don't do cream cheese. Call me crazy, call me stupid, but there you go!

I have been working on this recipe for turkey vegetable lasagna and I think I have finally perfected it. It takes a bit of time but its so worth it and makes a huge lasagna that will feed an army! Even my picky little brother liked this.

RECIPE: LASAGNA ROLL-UPS
*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~
INGREDIENTS:
8 ounces uncooked lasagna noodles
1 tablespoon olive oil
1 (10 ounce) package frozen chopped spinach, thawed and dried
2 tablespoons minced green onion
1 (15 ounce) container ricotta cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1 egg
1 (21 ounce) jar Alfredo sauce
1 cup shredded mozzarella cheese
DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Add
lasagna and cook for 8 to 10 minutes or until al dente. Rinse
in cold water and drain well.
