Tonight my boyfriend and I both came home from work very late and I elected him to make something for dinner that was quick and easy! Tuna Melt! If I would have made it, I would have made the tuna and toasted the bread with the cheese on top of it in the toaster oven but not my boyfriend, he took it to a whole other level.

Note: I'm going to stop cluttering up everyone's inboxes with ideas from this group. (I've had some bad experiences/comments with that in the past few days.) Original recipe yield:
4 servings
PREP TIME 5 Min
COOK TIME 10 Min
READY IN 15 Min
INGREDIENTS
1 (6 ounce) can tuna, drained
1/2 small onion, minced
pepper to taste
12 slices pickled jalapeno
2 English muffins, split
4 slices Cheddar cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine tuna, minced onion, and black pepper. Divide mixture onto 4 halves of English Muffins.

My boyfriend will be leaving for his first tour at the end of the year and we have been avoiding the topic for a long time. Now that it is soon appraching I have taken an interest in doing everything I can to be prepared.
Well, I recently came across USMC gals ( http://www.usmcgals.com/ ), an online community for all those people who have a loved one in the military.

Last night, the boyfriend and I met friends at Jones, my favorite restaurant in Philly.
I ordered one of my favorite dishes there last night, the sesame-seared tuna with coconut rice, snow pea salad and wasabi-sweet soy sauce. They won't share the recipe with me, but I went online and found some very similar recipes.

Meat is a good source of protein but it's expensive.
Cheese, poultry, eggs, peanut butter, dried peas, beans,
lentils, and some fish are less expensive and excellent
sources of protein.
I really like beans and Rice....

Buffalo Chicken Dip
2 cans drained chicken (i.e. like tuna)
1/2 – 1 cup of buffalo sauce (the more sauce the hotter the dip)
2- 8oz. bars of cream cheese
1 cup ranch dressing
1 ½ cups shredded cheddar cheese
In large frying pan, add chicken and buffalo sauce.

I just found this blog and thought it was a great idea to share! If nothing else, most of the meals can be made at the last minute, so they're perfect for those nights where you just can't make up your mind what you want to make. And they're good for those times you need to stretch your budget a little bit!
