1 lb of zucchini (about 2 medium sized), coarsely grated
Kosher salt
Ground black pepper
1 large egg
2 scallions, finely chopped
1/2 cup all-purpose flour
1/2 cup grape seed oil or olive oil
Sour cream or plain yogurt
1 Salt the zucchini with about 1 teaspoon of salt. Try to remove the excess moisture from the zucchini by either squeezing the liquid out with a potato ricer, or by squeezing with paper towels. (The original recipe calls for putting the zucchini in a colander set in the sink to let it drain for 10 minutes after salting it.

I love zucchini - it's inexpensive and absolutely delicious. So, when I saw a recipe on allrecipes for Zucchini Parmesan, I knew that I had to try it. I made a few changes to the original recipe and voila!

My boyfriend's mother used to make these for their family all the time when the boys were kids. They called them "blooms."
She cooked them up for me one Christmas, and they were amazing!

Okay, so the name is a little misleading, but I had this dish for dinner last night and I thought it was pretty tasty! The original recipe called for a little cream cheese, but #1 - I don't eat it and #2 - We have none in our house, so I just skipped that altogether. My husband said that it needed some sauce with it (I disagree), but he also said that just about anything would work - even some pasta sauce.

I originally found this recipe on allrecipes, but, me being me, I have twisted it a little. It's a great recipe to experiment with, one of my favorite things to do!
INGREDIENTS
1 tablespoon butter or olive oil (I've used either and also Smart Balance)
2 - 3 medium zucchini, cubed
1 pinch red pepper flakes
salt and pepper to taste
1 cup marinara sauce (Or whatever spaghetti/pasta sauce you have on hand)
1 1/2 cups shredded or sliced mozzarella or provolone cheese (I use whatever italian cheese I have handy.)
4 (6 inch) Italian sandwich/sub rolls, split
Personally, I love garlic, so I also add that as well - minced, garlic powder, you name it.

Ingredients for 6:
- 2.2 pounds zucchini
- 1/2 cup of rice
- 1 fistful of italian parsley (minced)
- 2 onions
- 3 eggs
- 2 cloves of garlic
- breadcrumbs
- parmesan
Preheat your oven 356°F at (180°C).
Slice thinly onions ans garlic (Take off the germ)
Cook the rice in salted water.
Clean and grate the zucchini.

While most people were out either trick-or-treating or swiping some of their kid's candy, I decided to take the opposite route and make myself an impromptu healthy dinner.
What you see is:
- roasted vegetables
- mashed yams
- steamed asparagus and zucchini
- quinoa
As some of you may know, I am no chef, so all of this delicious food was really easy to make.
Roasted Vegetables
Zucchini, carrots, potatoes, onions, and sweet potatoes with olive oil, rosemary, thyme, sea salt and pepper, baked for about 20 minutes.

There's really nothing more comforting in winter than a bowl of soup. I've never made soup, but I love vegetable purées and I was feeling inspired.
I had never done this before, so I did everything intuitively and used whatever vegetables looked good when I was shopping.

Carrot Zucchini BreadGrandma's recipe
Ingredients
1 1/2 cups whole wheat flour
2 tablespoons ground flaxseed (flax meal)
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon baking powder
1 egg
1 cup Sucanat (or sugar)
1/4 cup brown sugar
1/2 cup oil
1 teaspoon vanilla
1 1/2 cups grated zucchini
1/2 cup grated carrots
Directions
Mix dry ingredients in a bowl and set aside.
In a separate bowl, beat egg and add sugars. Then add oil and vanilla and mix until smooth.
Stir in vegetables. Then mix in dry ingredients.
