from whatever ingredients they were able to take from the
village.

Ripest juiciest tomatoes you can find (mine are home grown...woo hoo)
1 bunch fresh basil torn into pieces
1/2 cup extra virgin olive oil
a clove garlic minced
smidgeon of anchovy paste
handful of capers (rinsed)
some crushed red pepper if you like it hot
3/4 lb fresh mozarella diced in cubes (you MUST try buffalo mozzarella if you can find it- Whole Foods usually has it as does TJ's)
1 T of balsamic vinegar (or a little more or less to taste)
1 lbs dried pasta (zita or rigatoni work best)
about 1 1/2 hours before serving, stir your anchovy paste into the olive oil in a large serving bowl (you CAN leave it out, but try it even if you think you don't like anchovies....). add the garlic, the tomatoes, basil, capers, pepper, and cheese .... stir and just let it sit
when you're ready to eat, boil your pasta till al dente, drain it and add it to your tomato mixture and mix thoroughly.

Frog leg pizza topping sparks boycott call --------
LONDON - A London restaurant chain has raised the ire of
animal rights activists with its newest dish -- a pizza
topped with frog legs. A spokeswoman for Animal Aid called
for a boycott of Eco restaurants after they introduced "The
Hopper," a $31.07 pizza topped with eight frog legs plus
capers and anchovies, The Sun reported Thursday. The spokes-
woman said the process of preparing frog legs is cruel to
the amphibians.

1 Garlic Clove, Mashed
1 Tbsp. Anchovy Paste
1/4 c. Flat-Leafed Parsley

Serves 4–6
Green Sauce
2/3 cup lightly packed parsley leaves
3 tablespoons drained capers
1 clove garlic, chopped
juice of one lemon
1 teaspoon anchovy paste (optional)
1/2 teaspoon Dijon mustard
3/4 teaspoon salt, divided
1/2 cup plus 2 tablespoons olive oil, divided
freshly ground pepper to taste
2 zucchini, cut lengthwise into 1/4-inch slices
1 pint cherry tomatoes, halved
1 1/4 pounds raw shrimp (large), peeled
3/4 pound linguine
Ingredient options: Use spaghetti instead of linguine. Replace half of the parsley with basil.
If using wooden skewers, soak in water for at least 30 minutes.

4 cloves garlic, minced
4 anchovies
1/2 cup pitted kalamata olives, coarsely chopped
1/4 cup golden raisins
Coarse and freshly ground black pepper
Pinch of crushed red pepper (optional)
All-purpose flour, for work surface
Herbed Pâte Brisée
1 large egg, lightly beaten
1. Preheat oven to 425°. In a large skillet, cook escarole, covered, over medium heat until wilted, about 8 minutes.
