She came to stay for a month a couple days ago and yesterday she made that MAGNIFICENT apple pie, since I am so hooked in posting my favorite recipes I just HAD to get this one!&lt;br /&gt;
Another to die for dessert! Enjoy! Oh you will!&lt;br /&gt;

Ingredients:&lt;/p&gt;
&lt;p&gt;Filling:&lt;br /&gt;
7 large Granny Smith or Pippin apples, peeled and cored&lt;br /&gt;
1 cup sugar&lt;br /&gt;
3 tablespoons quick-cooking tapioca&lt;br /&gt;
1 teaspoon ground cinnamon&lt;br /&gt;
1/2 teaspoon salt&lt;br /&gt;
Juice of 1/2 lemon&lt;br /&gt;
1 tablespoon heavy cream&lt;br /&gt;
1 large egg&lt;br /&gt;
Caramel topping, recipe follows&lt;/p&gt;
&lt;p&gt;Dough:&lt;br /&gt;
2 cups all-purpose flour&lt;br /&gt;
1/2 cup lard&lt;br /&gt;
2 1/2 tablespoons unsalted butter&lt;br /&gt;
1/2 teaspoon salt&lt;br /&gt;
About 1/2 cup iced water&lt;/p&gt;
&lt;p&gt;Caramel Topping:&lt;br /&gt;
1/2 cup packed brown sugar&lt;br /&gt;
4 tablespoons unsalted butter&lt;br /&gt;
2 tablespoons heavy cream&lt;br /&gt;
1/2 cup pecan halves&lt;/p&gt;
&lt;p&gt;How to make:&lt;/p&gt;
&lt;p&gt;Pie dough:&lt;br /&gt;
In a large bowl combine the flour with the lard, butter and salt. Mix lightly with your fingertips until the dough forms grape-sized pieces. You should be able to see chunks of fat. Stir in the iced water. Lightly knead, handling the dough as little as possible, until the dough forms a ball. Add a little more iced water if necessary. Transfer to a plastic bag and shape into a log. Seal the bag, pressing out any air, and chill for as little as 1 hour or as long as 3 days. The pie dough can be frozen for as long as a week.&lt;/p&gt;
&lt;p&gt;Caramel topping:&lt;br /&gt;
In a small saucepan combine brown sugar, butter and cream. Bring to a boil and cook for 2 minutes. Remove from the heat and stir in the pecan halves.&lt;/p&gt;
&lt;p&gt;The pie:&lt;br /&gt;
Butter and flour a 9-inch glass pie plate. On a lightly floured surface roll the dough to a 12-inch round about 1/8-inch thick. Line the pie plate, being sure to press the dough into the bottom and up the sides without stretching. Chill 30 minutes. Roughly chop the apples into small pieces, about the size of lima beans. (The apples should measure about 9 cups chopped.) Combine with the sugar, tapioca, cinnamon, salt and lemon juice in a large bowl. Set aside until the juices begin to run, about 10 - 15 minutes. Beat together the cream and egg to make a glaze and brush over the edges and bottom of the crust. Mound the apple filling in the pie shell. It will be quite full. Roll out the remaining dough to a large round about 1/8&#039;&#039; thick. Place over the filling a seal the edges together by gently pressing together. Trim any excess dough with scissors and flute the edges. Brush the top with the remaining egg glaze. Using a paring knife, cut out and remove a circle the size of a quarter from the center of the top crust. Cut 5 or 6 slits in a spoke pattern beginning 1/2-inch from the center hole and ending 1/2-inch from the outside edge. Chill for 30 minutes before baking.&lt;br /&gt;
Preheat oven to 425 degrees. Place the pie plate on a cookie sheet and bake 10 - 15 minutes, or until the top is golden brown. Reduce the heat to 300 degrees and continue baking until the juice visible in the center becomes thick and bubbly, about 1 hour (if the edges are browning too quickly, cover with aluminum foil). Meanwhile prepare the caramel topping. Spoon the hot caramel over the top of the pie to coat and return to the oven. Bake 5 minutes longer, or until the caramel sets. Cool on a rack before serving.&lt;/p&gt;

I don&#039;t know how healthy this is, but the recipy is on the back of my splenda sugar box, so I thought I would post it.&lt;br /&gt;
Ingredients&lt;br /&gt;
9-inch double pie crust&lt;br /&gt;
7 cups thin-sliced, cored, peeled baking apples (about 7 medium)&lt;br /&gt;
1 cup Splenda granular no calorie sweetner&lt;br /&gt;
3 tbsp cornstarch&lt;br /&gt;
3/4 tsp ground cinnamon&lt;br /&gt;
1/4 ground nutmeg&lt;br /&gt;
1/4 salt&lt;br /&gt;
Directions&lt;br /&gt;
Prepare or purchase a double pie crust and set one crust into a 9-inch pie pan. Place sliced apples into a large bowl and set aside. Combine Splenda, cornstarch, cinnamon, nutmeg, and salt in a small bowl. Sprinkle the mixture over apples and toss. Spoon apple mixture into pie crust. Place the second crust over the filling. Seal edges, trim, and flute. Make small openings in the top crust following your preferred pattern. Bake in a preheated oven at 425 Degree F until top crust is golden brown (about 40-50 minutes). Serve warm or chilled.&lt;br /&gt;
There you go. A yummy pie with no calorie splenda!&lt;/p&gt;

 <title>Apple Crisp: for those too lazy to make a proper pie crust</title>

&lt;p&gt;I made an apple crisp with apples from the aunt and uncle&#039;s orchard¹.&lt;br /&gt;
No huge story today, just a recipe and some photos.&lt;/p&gt;
&lt;p&gt;Sorry things aren&#039;t precise but think of them as guidelines.&lt;/p&gt;
&lt;p&gt;[filling]&lt;br /&gt;
- 5-6 peeled, cored, and sliced apples (I&#039;d like to tell you exactly how many but they were already quartered when I got them)&lt;br /&gt;
- ? cup granulated sugar&lt;br /&gt;
- about ¼ cup of honey&lt;br /&gt;
- 2 Tbsp. cornstarch&lt;br /&gt;
- water&lt;br /&gt;
- half and half or heavy cream&lt;br /&gt;
- 1-2 Tbsp. butter&lt;br /&gt;
- cinnamon&lt;br /&gt;
- freshly grated nutmeg&lt;br /&gt;
- splash o&#039;brandy (or two splashes if you&#039;re feeling festive)&lt;br /&gt;
- handful of raisins&lt;/p&gt;
&lt;p&gt;[topping]&lt;br /&gt;
½ cup all-purpose flour&lt;br /&gt;
½ cup chopped pecans&lt;br /&gt;
¼ cup firmly packed brown sugar&lt;br /&gt;
½ tsp. cinnamon&lt;br /&gt;
¼ ginger&lt;br /&gt;
¼ cup cold butter, cut up&lt;/p&gt;
&lt;p&gt;1. Filling: combine apples, raisins, sugar, honey and a half cup of water in a large saucepan. Bring to simmer over medium heat, then cover and cook until apples are tender. Add the brandy. Dissolve the cornstarch in the cream/half and half in a seperate bowl and then stir into the apples. Bring to a boil and stir occasionally for two to five minutes. Remove from heat. Stir in the butter, cinnamon and nutmeg. Let cool.&lt;/p&gt;
&lt;p&gt;2. Topping: combine everything except the butter into a bowl. Cut in the butter until you have coarse crumbs. Technically you can use a pastry cutter or 2 knives but I just used my hands. Set aside.&lt;/p&gt;
&lt;p&gt;3. Spoon filling into a pie dish or a large ramekin. Sprinkle topping evenly over apples. Bake for 10 minutes at 400º F. Reduce temperature to 375º F and bake for another half an hour. If the topping is browning too quickly cover loosely with foil. Cool on wire rack. Get your eat on.&lt;/p&gt;

&lt;p&gt;&lt;/p&gt;

 <title>The LONG VIEW</title>

Read this story from a book on Prayer by Philip Yancey that I am almost done reading (started in earlier this year!... sorry slow reader...)&lt;br /&gt;
&#039;You must be hungry after shoveling so hard! Let me get you a piece of apple pie. So you like apple pie? You stay right there and let me get you some pie.&#039;&lt;br /&gt;
She was an 80yr widow, and I knew it would take her at least 10mins for her to make it into the kitchen, never mind dishing out the pie, I sat at the table, wondering how long she would make me sit before I got my pay and was there of there.&lt;br /&gt;
The offering was quintenssential New England: light golden brown crust, piping hot apples adn cold milk in a tall glass. I devoured it.&lt;br /&gt;
She had barely sat down at the head of the table to enjoy her slice when she noticed my bare plate. &quot;Let me get you another piece!&#039; There was no declining the offer: she was into the kitchen before I could open my mouth. Funny how quickly she could move at times. The pie was good, the milk cold, and I made quick work of her second offering.&lt;br /&gt;
But she kept talking and talking. It was the unspoken dread of our neighbourhood - getting caught with Mrs Back. We all  have a Mrs Back in our lives. Even at at young age, I began to reflect , &lt;i&gt;how could somehow be so oblivious to the cues before her- how could she not notice that I wanted out of there&lt;/i&gt;?&lt;br /&gt;
About 10 years later, on a Monday afternoon, something inside me said, You need to tell Mrs Back. For on that previous Friday night, at a bachelor party in Harvard Square, I have myself to Jesus. I still hadn&#039;t told anybody. But somehow I knew: I was supposed to tell Mrs Back.&lt;br /&gt;
It was a lovely spring afternoon in May, and Mrs Back was hanging out her laundry to dry. I walked up to the fence. &quot;Mrs Back, do you know what it means to be &quot;born again&quot;?&#039;&lt;br /&gt;
She dropped everything and looked at me in sheer surprise and delight. &quot;Why, yes I do.&#039; She had been a pastor&#039;s wife, after all.&lt;br /&gt;
&#039;Well the other night, I was born again.&#039;&lt;br /&gt;
She looked at me and said with a firm note, &#039;You stay right there!&#039; I stood on the driveway, at the fence, watching her hobble up to the back door, up the steps with her cane.&lt;br /&gt;
10 minutres later she came out from her back door, walked over to me and handed me the biggest, most delicious piece of choclate cake I had ever eaten in my life. She smiled adn said, &#039;Eat it!&#039; And I devoured that piece of choclate cake as she stood there and gazed at me. Celebrating with me. Rejoicing with me.&lt;br /&gt;
Finally, she spoke. &#039;For the last 15 years, since you moved in, I have prayed every day for you and for Paul [my friend who lived on the other side o fher house] - I prayed every day that you would come to know Jesus.&#039;&lt;br /&gt;
Well hope you liked this... as it touched my heart and taught me about praying, especially about praying for someone else.&lt;br /&gt;
