Ingredients
• 2 packages (9 oz.) frozen artichoke hearts, thawed
• 2 large garlic cloves, quartered
• 1/4 cup olive oil
• 2 Tbsp. lemon juice
• 1 tsp. Italian seasoning
• 1/2 cup mayonnaise
• 1/2 cup grated Parmesan cheese
• 1 cup grated mozzarella cheese
• 1 loaf country bread

I'll just say it flat out: I hate mayonnaise. I don't like cream cheese. So when it comes to spinach and artichoke dip, it's pretty hard to find a recipe that works for me and my particular (and peculiar) tastes!

Since I'm working today and have plans for tonight, I don't have the time or energy to put a lot of work into something to bring to the 4th of July party I'll be attending on gorgeous Wilson Lake here in Florence, AL tomorrow. That being the case, I'm going with an old standby that's easy and incredibly tasty. And since I'm needing some cheer to get me through this dragging last work day of the week before a delicious long holiday weekend, I thought I'd share...have a great 4th everyone!

Never did I think I would ever consider a recipe that had artichokes in it. That was until I had been eating the spinach artichoke dips that are featured on the appetizer menus at several popular restaurants. I also even had a dish at my wedding that featured artichokes.

This dish was inspired by my favorite appetizer, spinach and artichoke dip. Since it is based on bar food, it only seems right to season it with beer. The alcohol cooks off, and the remaining taste is slightly sweet, a perfect complement to the sharp cheese flavors.

I made this recipe up last night for Valentines day. I cook dinner for my boyfriend almost every night, so I wanted to make something that I’ve never made before, something that would really wow him. I was looking online and found a few stuffed chicken recipes but they were all pretty basic.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

I find Greek cuisine as one of the heartiest and healthiest food choices all around. And recently, one of our Greek friends just had her birthday and it was a no-brainer to check out Petros as it was just named "Top New Restaurant" by Zagat (and rightfully so).

Redbook madras chickenYesterday, I spent 1 1/2 hours in a prep kitchen preparing my family meals. I prepared six servings of the following dishes and this will feed my family until the first week in October! Using the prep kitchen and freezing my meals makes it easier for me to work my crazy hours and still come home and cook (which I love to do).
