Ok Ladies and Gentlemen, I have tried this recipe and let me tell you, it's like eating heaven on earth!!!
8 medium baking potatoes, about 4 pounds
One 8-ounce package cream cheese, room temperature
1/2 cup (1 stick) butter, softened
2 cups (1/2 pound) shredded sharp Cheddar Cheese
1 pint sour cream
2 cloves garlic, minced
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/4 cup chopped chives, for garnish
6 slices bacon, cooked crisp, drained and crumbled, for garnish (Optional - I leave this out for my vegetarian friends)

Baked Potato Pancakes
I'm of German descent, and my mother always served either Klosse (Potato Dumplings) or the fried version, Reiberdatschi (Potato Pancakes) with nearly every meal. Now that I've become more health conscious, I have found a way to duplicate the taste of Reiberdatschi without all the saturated fat.
