My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

I improvised this tortellini with sun-dried tomato pesto recipe when the boyfriend and I had a dinner party. It was so easy but very well-received.

Ingredients
5 uncooked lasagna noodles
Nonstick cooking spray
2 cups sliced fresh mushrooms
1 cup chopped onion
1 cup chopped green bell pepper
2 cloves garlic, minced
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (8 ounces) no-salt-added tomato sauce, divided
1 teaspoon chopped fresh basil or 1/4 teaspoon dried basil
1 teaspoon chopped fresh oregano or 1/4 teaspoon dried oregano leaves
1/8 teaspoon ground red pepper
1-1/2 cups low-fat (1%) cottage cheese or reduced-fat ricotta cheese
1/4 cup grated Romano or Parmesan cheese
2 egg whites
3 tablespoons fine dry bread crumbs
1/2 (10-ounce) package frozen chopped spinach, thawed and well drained*
3/4 cup (3 ounces) shredded part-skim mozzarella cheese
1/4 cup chopped fresh parsley
Preparation:
1. Prepare noodles according to package directions, omitting salt; drain. Rinse under cold water; drain.

Lately, I've been on a pesto kick, so I thought I'd share a delicious sandwich today that has not one, but two different kinds of pesto in it! Plus, add the roasted red peppers and feta cheese and I'm in heaven!
Basil Pesto Sunshine Sandwich

4 slices focaccia bread, cut in half horizontally
1/4 cup mayonnaise
2 tablespoons and 2 teaspoons basil pesto
1/2 cup sun-dried tomato pesto
1 cup roasted red peppers
2 cups crumbled feta cheese
2 cups fresh basil leaves

Linda is my boyfriend's mother - an amazing cook and proud Italian.
She made this sandwich for us one time when she cmae to visit us in Philly. We all went down to the Italian Market, which is a fantastic place to get fresh, cheap produce, cheese, meat and bread (if you're ever in Philly, check it out.

This recipe makes 2 HUGE lasagna's so I suggest you half it. I saw Tony make this on his talk show, back in the day haha. When I made it myself, I thought it was the best damn lasagna I have ever had.
