Green Beans with Caramelized Red Onions
From Good Housekeeping Magazine November 2006
Salt and ground black pepper
3 pounds green beans, trimmed
1 1/2 pounds red onions (about 3 medium), each cut in half, then sliced
3 tablespoons margarine or butter
1 tablespoon fresh thyme leaves, chopped
Directions
1. Fill large bowl with ice water to cool beans quickly after cooking; set aside. Heat 6- to 8-quart saucepot of salted water to boiling over high heat.

Mexican "Vanilla" With Coumarin: No Bargain

Tourists tempted to pick up bargains south of the border should beware of one bargain that isn't always a good buy—so-called Mexican "vanilla." This flavoring product may smell like vanilla, taste like vanilla, and be offered at a cheap price. But it's often made with coumarin, a toxic substance banned in food in the United States.

This plate is definitley one of my favorites. It’s quick, easy and delicious!
Cook Time: 10 Min; Prep Time: 10 Min; Servings: 2
Ingredients:
4 skinless tilapia fillets (1 pound total)
Freshly ground black pepper to taste
1 tablespoon dried basil
¼ cup Parmesan cheese
2 teaspoons olive oil
For the Green Beans:
1/2 pound green beans, ends trimmed
¼ cup fresh lemon juice
2 teaspoons freshly grated lemon zest
Freshly ground black pepper to taste
1 tablespoon olive oil
Directions:
Preheat the broiler.

A few people have posted really tasty, fun recipes using refried beans today. So, I thought I'd put up the chili bean dip that I use instead of refried beans in my famous 7 layer dip! It's also great served with pita bread or tortilla chips.

Have one bowl of this soup and you'll get nearly three quarters of your daily requirement for vitamin C.
Ingredients:
4 large tomatoes, cut into chunks
1 1/2 tsp salt, plus extra for tomatoes
Parchment paper 3 tsp olive oil, divided
1 leek, thinly sliced
1/2 medium onion, diced
4 cloves garlic, sliced
1/4 cup red wine
2 sprigs oregano
1/4 cup plus
2 tbsp chopped flat-leaf parsley
1/4 lb (1 1/2 cups) shelled beans (such as fava, lima or cranberry)
1/4 lb (3/4 cup) flat romano beans, cut into 1-inch lengths
1/4 tsp cayenne pepper
1/4 lb squid, thinly sliced
1 clove garlic, finely chopped
4 slices crusty bread
1 clove garlic
Directions:
Heat oven to 375˚.
Sprinkle tomatoes with salt and place on baking sheet lined with parchment paper; roast 40 minutes.

As the numero uno carrier of heart healthy antioxidents out of any food known to man, red kidney beans should be a part of everyone's health regimen. Some people refuse to eat beans, though, because the...well, to put it politely..."after effects" can be disturbing (especially to bystanders!). If you place a raw red potato, unskinned but poked with a fork, into the beans while you cook them, the gas-producing enzyme will not be a problem.

Planning on entertaining some guests try this as one of your side dishes.
Serves: 6 Prep Time: 5 minutes Cook Time: 30 minutes
Ingredients:
8 ounces green beans, ends removed
1 tablespoon butter
1 tablespoon olive oil
3 cloves garlic, minced
1 cup cooked brown rice
1 teaspoon salt
¼ teaspoon freshly ground black pepper
Directions:
Bring 16 cups of water seasoned with salt to a boil. When boiling, add green beans.
