Blueberry Jam
Makes 1 Dozen 8oz Jars
8 cups of frozen blueberries
4 tbsp lemon juice
2 packets of 100% fruit pectin
10 1/2 cups of sugar
First of all, you will need to sterilize the jars.
Wash the jars & lids in hot, soapy water, rinse and then sterilize by putting them in boiling water for at least 10 minutes. Since it's best to fill the jars when they are hot (to prevent breakage) you may want to leave them in the hot water until you are almost ready to pour the jam in.

For the Ginger simple syrup:
1/4 cup grated fresh ginger
1 cup granulated sugar
1 cup cold water
For the Mojito:
1 cup fresh blueberries
1 lime, cut into wedges
20 to 24 fresh mint leaves
4 ounces ginger simple syrup
4 ounces vodka
5 ounces club soda
Ice cubes
Blueberries, for garnish
Mint leaves, for garnish
For the Ginger simple syrup:
Peel and grate the ginger and add it, together with the sugar and cold water, to a saucepan.

More blueberries!! BUT now there's chocolate :)So people seemed to react well to the Blueberry Ricotta Pancakes so I found another recipe with blueberries in it, and some white chocolate for sanity!! These I want to make this weekend too...man it is a weekend of baking and blueberries for me!

Try these hearty waffles with pure maple syrup and additional blueberries for a delicious brunch dish!
prep time:20 min
Start to Finish:20 min
makes:6 servings (2 waffles each)
Ingredients:
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup quick-cooking oats
3 teaspoons baking powder
1 tablespoon sugar
1 1/2 cups fat-free (skim) milk
2 tablespoons vegetable oil
1 egg
1 cup Cascadian Farm® frozen organic blueberries, thawed, drained
Directions:
Lightly spray waffle iron with cooking spray; heat waffle iron. In large bowl, stir together flours, oats, baking powder and sugar.

We picked up some fresh blueberries at the farmer's market yesterday, and this is one of our favorite (naughty) things to do with blueberries. This was a Good Thing from Martha a while back.
Heat up a few teaspoons of butter over medium heat, put in blueberries and sprinkle some sugar on top.

Blueberries are low in calories and high in antioxidants, so they definitely fall into the super food category. I always throw a few on my cereal when I have them off hand, but I never thought about throwing them in a salad too.
That is why when I found this blueberry chicken salad recipe, I just had to share it with you all.

Blueberry Chicken Salad

What you need:
4 cups sliced Belgian endive (about 2 large heads)
1 cup gourmet salad greens
1 1/2 cups chopped roasted skinless, boneless chicken breasts
1 cup fresh blueberries
1/2 cup crumbled feta cheese
2 tbsp chopped pecans, toasted
Dressing:
2 tbsp apple cider vinegar
2 tbsp honey
3/4 tsp salt
1/4 tsp black pepper
What you do:
Combine first four ingredients in large bowl.
Make the dressing in a separate bowl, combine vinegar, honey, salt, and pepper; stir with whisk.
Add dressing to endive mixture; toss gently.
Sprinkle with cheese and pecans.
Yield: 4 servings
