I had this last week at Bunco. I usually don't like raw broccoli but this was soooooooooooo good. I made it last Sunday and my family loved it.

For all you Broccoli Rabe lovers this recipe is for you!
Serves: 6; Prep Time: 5 minutes; Cook Time: 20 minutes
Ingredients:
Nonfat vegetable cooking spray
8 ounces broccoli rabe, washed, trimmed, and cut into 1-inch pieces 1 medium garlic clove, minced or pressed through garlic press
11 egg whites
1 whole egg
1/8 teaspoon red pepper flakes
3 ounces oil-packed sun-dried tomatoes, drained and chopped coarse
1/4 cup fat-free milk (or water)
Salt Pepper
3 ounces freshly grated Parmigiano-Reggiano Directions
Directions:
Coat a medium nonstick oven-safe skillet with cooking spray.
Saute the broccoli rabe until tender.

Ingredients:
1 1/2 c brown rice
8 oz beef fillet
3 Tbsp canola oil
3 Tbsp diced shallots
3 Tbsp diced garlic
1 Tbsp fermented black beans (or black bean paste)
4 scallions, cut into 1" pieces
1 oz ginger, cut into long strips
2 c broccoli or broccolini, cut into 1" pieces
1/2 c chicken or beef stock (can substitute white wine or water)
2 Tbsp balsamic vinegar
Directions:
Cook brown rice per package directions.
Meanwhile, heat a cast-iron pan or wok over high heat.

Creamy Chicken with Broccoli Shells
From Sandra Lee's Semi-Homemade Slow Cooker Recipes
Prep Time: 30 minutes
Makes about 6 servings
1 box (12-ounce) dried jumbo pasta shells
1 package (10-ounce) frozen chopped broccoli
2 tablespoons water
1 large egg
1 container (15-ounce) ricotta cheese
1 cup cooked chicken, chopped
2 cups shredded mozzarella cheese
1 tablespoon dried Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1 jar (16-ounce) roasted garlic Alfredo pasta sauce (Sandra Lee recommends the Classico brand.)
Directions
1. Preheat oven to 350 F.

Start healthy eating with this waistline-trimming recipe. It has powers of MUFAs (monounsaturated fats) to create a serious flab-fighting meal.
TIME: 40 minutes
SERVINGS: 4
Ingredients:
3 c sm broccoli florets with short stems (about 1/2 lb crowns)
2 lg carrots, cut into thin diagonal slices (2 c)
5 oz soba noodles
1 Tbsp olive oil
1 Tbsp minced fresh ginger
3 lg cloves garlic, minced
2 boneless, skinless chicken breast halves (6 oz each), sliced crosswise
1 Tbsp reduced-sodium soy sauce
1 tsp toasted sesame oil
3 med scallions, thinly sliced (about 1/2 c)
1/2 c reduced-sodium, fat-free chicken broth
1/2 c raw, unsalted cashews (3 oz), lightly toasted (MUFA)
Directions:
Bring large pot of water to a boil.

My SILNIL has made this a few times, and I finally remembered to copy the recipe this afternoon. It is delicious and almost cake-like. I could eat half the pan, and a few others agreed it could be a meal in itself.

Serves 4
Ingredients
• 1 lb. lean ground beef
• 1/4 cup finely chopped onion
• salt and pepper
• 3 cups packaged broccoli or cabbage slaw mix
• 1/4 cup hoisin sauce
• 4 burrito-size tortillas
Directions
1. In large nonstick skillet, brown ground beef and onion over medium heat for 8 to 10 minutes, or until beef is no longer pink, breaking beef into crumbles.

My little one last night asked me to make Brussels sprouts and then proceeded to eat three helpings. This photo is from her early days as a veggie lover. And yes, after the photo was taken we had the "don't take such big bites of your food you could choke" converstaion.
