Inexpensive Vegetable Broth
I use a lot of onions and garlic every week – I mean tons! I probably use a head of garlic every 2 days and an onion every day. Not to mention other veggies.

I love me some mashed potatoes, especially on Thanksgiving. The problem is that this dish is usually overloaded with tons of butter and cream, which can be a big problem if you're trying to stay healthy. One way I make my mashed potatoes healthier is by using Yukon Gold or Yellow Finn potatoes instead of the old stand-by, Russet potatoes.

This recipe got some rave reviews on allrecipes and I'm planning to make it sometime this week, so I'll let you know what my take on it is as well.
Spicy Kielbasa Soup
PREP TIME 15 Min
COOK TIME 8 Hrs
READY IN 8 Hrs 15 Min
1/2 pound reduced-fat smoked turkey kielbasa, sliced
1 medium onion, chopped
1 medium green pepper, chopped
1 celery ribs with leaves, thinly sliced
4 garlic cloves, minced
2 (14.5 ounce) cans reduced sodium chicken broth
1 (15.5 ounce) can great northern beans, rinsed and drained
1 (14.5 ounce) can stewed tomatoes, cut up
1 small zucchini, sliced
1 medium carrot, shredded
1 tablespoon dried parsley flakes
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
Directions
In a nonstick skillet, cook kielbasa over medium heat until lightly browned. Add the onion, green pepper, celery and garlic.

Not as hard as it looks and the broth was delicious
Partysugar actually posted her dinner in Savory Sights and i saw it and just had to try it for myself! So we conspired together and I made up a recipe pulled from bits of recipes i found on the web.

So I'm all about the soup lately. I went to lunch with friends on Friday and had tortilla soup then Sunday I was really craving it again. I decided to try my hand and make my own.

The other night I roasted a bunch of vegetables to have with steak. Of course I always make enough for ten people and there is only my husband and I. I had a lot left over and I didn't want to waste it so I decided to make soup.

A couple weeks ago I went to lunch at a deli down the street from my work and had the most delicious Tomato Gorgonzola soup. I decided to try and make it myself. I scoured the internet for a recipe and ended up mixing several together to make this one.

4-6 boneless skinless chicken breasts
2 14 oz cans chicken broth
2 10 oz. cans cream of chicken soup
1 16 oz container sour cream
2 Tbl poppy seeds
1 sleeve of Ritz crackers, crushed
1/2 stick butter, melted
cooked white rice
Boil chicken breasts in broth for 20 minutes until just cooked. Cut breasts into 1" cubes and place in a 13x9 inch baking dish. Mix reserved broth, cream of chicken soup, sour cream and poppy seeds and pour over chicken cubes. Mix well. Combine cracker crumbs and butter and sprinkle over top. Bake at 350 degrees for 30 minutes. Serve over rice. Delicious!

Went on a third date with the irresistibly handsome Mr. I'minlikewithyou and had the most amazing fish dish at Aziza a Moroccan place and Stanlee Gatti's favorite restaurant. I had heard that the service was bad, but we sat at the bar and had a wonderful intimate time and shared a bottle of Rhone.
