Ingredients:
-2 to 4 chicken breast halves
-Equal parts MAYO and PARMESAN CHEESE
a good amount is about 1/2 cup of each for 4 chicken breasts
-Seasoned bread crumbs
(ex. oregano, basil, parsley etc)
*Preheat to 425
*Combine the mayo and parmesan cheese
*Coat the chicken with this mixture and then bread crumbs
*Place in a glass pan and bake for 20 minutes, or until throughly cooked
-REALLY excellent served with Lipton Parmesan noodles
An incredibly easy meal, with ingredients that are always in the house.
My husband comes home late or unexpectedly a lot, HUNGRY, and this is something I can make easily and quickly while he's still putting his uniforms away and getting settled and then serve to him.

This is such a quick and easy way to do this.
Use whatever frozen breaded chicken you have - breaded chicken fillets are good, they are bigger. Fry them in oil until they are golden brown and cooked through - 5 min.

My boyfriend and I went to Chicago the other day and we randomly picked a restaurant: Pizza Capri.
I got this tri-color tortellini with parmesan garlic cream sauce, chicken, pine nuts and spinach, and I asked for mushrooms and broccoli for more healthy veggies. This was one of the most amazing dishes I've ever had!

Redbook madras chickenYesterday, I spent 1 1/2 hours in a prep kitchen preparing my family meals. I prepared six servings of the following dishes and this will feed my family until the first week in October! Using the prep kitchen and freezing my meals makes it easier for me to work my crazy hours and still come home and cook (which I love to do).

Lemon-Pepper Chicken with Marinara over Pasta
This dish is delicious with fresh refrigerated pasta, but be sure to buy the reduced-fat variety. Better yet, try making your own homemade pasta. Yes, it can be time consuming, but the taste is well-worth the wait.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! Marinate mixed olives (jar) with freshly grated peel and juice from 1 lemon in refrigerator at least 24 hours.
