Buffalo Chicken Salad

1 box (10.5 oz) frozen crispy baked chicken tenders
1 bag (7 oz) Parisian salad mix (green leaf, frisée, radicchio and shredded carrots)
4 ribs celery, cut diagonally in 1/2-in. pieces
1 cucumber, halved, seeded and cut in 1/2-in. chunks
1 red bell pepper, halved, cored and cut in 1/2-in.

A big yea for dinner last night. On a whim I decided to create a Sesame Chicken Salad for the hubby and I last night.
First off I started with a bottle of A1 Kobe Sesame Teriyaki Steak Sauce.

This is one of my favorites to make, and the yogurt dressing is so refreshing. Not to mention it incorporates a favorite fruit of mine, cantaloupe. Enjoy with a nice glass of ice tea.

Try this chopped chicken salad for tomorrow’s lunch!
Serves: 1; Prep Time: 15 minutes
Ingredients:
1 tablespoon reduced-fat sour cream
1 tablespoon plain lowfat yogurt
1 tablespoon lemon juice
1 tablespoon chopped fresh dill
1 ½ teaspoons Dijon mustard
1 cooked Broiled Lemon-Dill
Chicken Breast, plus ½ cup cooked bell peppers
½ cup cherry or grape tomatoes, halved (about 2 ounces)
¼ cup cucumber slices
1/8 ripe avocado, diced Pita bread (optional)
Directions:
Make dill dressing: Combine sour cream, yogurt, lemon juice, dill, and mustard in a bowl.
Remove skin, lemon slice, and dill from chicken and discard.

4 small boneless skinless chicken breast halves (1 lb.)
2 medium Granny Smith apples, quartered
1 large red onion, quartered
1/4 cup KRAFT Zesty Italian Dressing
1/2 cup KRAFT Original Barbecue Sauce
6 cups torn mixed salad greens
1/4 cup KRAFT Ranch Dressing
Directions
PREHEAT grill to medium-high heat. Brush chicken, apples and onions with Italian dressing.
GRILL chicken, apples and onions 10 min.

Chicken SaladMy B-friend eatting and LOVING the chix salad!! :-)This is one of my b-friends fav and it's SO easy and tasty! I make a very simple version, however, I'm sure you can add other ingredients.

Blueberry Chicken Salad

What you need:
4 cups sliced Belgian endive (about 2 large heads)
1 cup gourmet salad greens
1 1/2 cups chopped roasted skinless, boneless chicken breasts
1 cup fresh blueberries
1/2 cup crumbled feta cheese
2 tbsp chopped pecans, toasted
Dressing:
2 tbsp apple cider vinegar
2 tbsp honey
3/4 tsp salt
1/4 tsp black pepper
What you do:
Combine first four ingredients in large bowl.
Make the dressing in a separate bowl, combine vinegar, honey, salt, and pepper; stir with whisk.
Add dressing to endive mixture; toss gently.
Sprinkle with cheese and pecans.
Yield: 4 servings

Blueberries are low in calories and high in antioxidants, so they definitely fall into the super food category. I always throw a few on my cereal when I have them off hand, but I never thought about throwing them in a salad too.
That is why when I found this blueberry chicken salad recipe, I just had to share it with you all.

Tonight for dinner I made Jen's Chicken Littles and GirlC's Easy Greek Salad. Since I was fresh out of Chick-Fil-A Honey Roasted sauce, I just gave the chicken a quick squirt of lemon. The kids LOVED it and kept asking for more.
