I hope you have all been enjoying the recipes that I've been posting. I absolutely love to cook, and while I love to cook food that is more "gourmet", so to say, the reality of my life is that I just don't have the time. I cook 3 or more times a week (utilizing leftovers!), and really feel that good food doesn't have to be complicated or take all day.

In the spirit of Memorial Day weekend, I decided to make a BBQ inspired meal. Thanks to Sandra Lee, I found something quick and easy to make. Just a little warning, mine got pretty spicy!

I don't have a pic but this is AMAZING stuff! I think of it as a stew/chili combo
Ingredients:
8 bacon strips, diced
2 1/2lbs of stewing beef (cubed)
2 28 oz can stewed tomatoes
14 1/2oz crushed tomatoes
2 8oz cans of tomato sauce
16oz can kidney beans
16oz can of black beans
16oz can of white kidney beans
16oz can of romano beans (I think they are called Great Northern in the USA)
2 cups sliced carrots
1 medium onion, diced
1 garlic clove, minced
1/2 cup green pepper, diced (I omit)
1/4 fresh parsley, minced
2 tbsp. chili powder (more if u like it to be hotter)
1 tsp.

This is going to be more a review than recipe because honestly I pretty much did only what the can told me too. Except I did add a little spice here and there. So here goes....

On a recent episode of Anthony Bourdain's No reservation he visited Cleveland, Ohio and saw all that Ohio had to offer including a bookstore filled Twinkie cream and the great Ohio creation of 3-way chili. I went with my boyfriend for a week long tour of Ohio to visit his family and had to try Skyline Chili.
According to the menu it is an old Greek recipe passed down for generations, however, when I was in Greece I never remember eating spaghetti, runny chili sauce with a pound of cheese but everything is possible.

Since LaylaCams posted her yummy sounding chili recipe, I figured I'd post mine as well.
Actually, it's not MY recipe, it's just the one I use. The recipe was created by my ex-boyfriend (and still-friend) Brendan.

This recipe really stuck out in my mind for one particular reason: YOU DON'T HAVE TO BROWN THE MEAT! (Although if you're vegetarian you could very easily just leave it out and it would still be delicious.)
And thank goodness for that. I use my slow cooker because I love the idea of dumping everything in there in the morning and coming home at night and dinner is just sitting there, waiting for me, with tempting smells wafting through the house.

I created this recipe after all of the chicken chili recipes that I found were loaded with cream or other bad for you ingredients. This chili is very filling and good for you!I am going to make it tonight for a work potluck tomorrow and then I will post a picture.
2 tablespoons olive oil
2 chopped onions
2-3 large red bell peppers, chopped
2 Jalapeno Peppers, minced
4 garlic cloves, chopped
2 1/4 pounds skinless boneless chicken breasts, cut into 1/4-inch cubes
1 small can of tomato paste
3 1/2 tablespoons chili powder
1 tablespoon cumin seeds
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
2 cans drained kidney beans
2-3 15-ounce cans diced tomatoes in juice
Bottle of Beer
1 Can of Chicken Stock
About 2 Teaspoons of Brown Sugar (I never really measure this)
1 Ounce of Unsweetened Chocolate or 1 Tablespoon of Unsweetened Cocoa Powder
Heat oil in a large pot over medium heat.

Great for football Sundays (go Bears!) another recipe from Penzeys Spices
2 lbs ground beef
3 TB vegetable oil
1 medium onion, chopped
1 red bell pepper, chopped
3 cloves garlic, minced, or 1/2 tsp granulated garlic (Penzeys)
1/2 tsp fresh ground black pepper
1 tsp cumin
1/2 tsp chipotle pepper (Penzeys)
1/2 - 1 1/2 tsp crushed red peppers
3 TB chili powder (Penzeys is the best)
3 cups water
1 26 oz. can tomato puree
2 16 oz cans no salt added chopped tomatoes
2 16 oz cans kidney beans, drained
1-2 tsp salt
Brown beef in two batches in a thick-bottomed soup kettle. Drain off fat and set browned beef aside.
