Diabetic Chocolate Mousse Pie
My father is a diabetic and doesn't get to enjoy desserts anymore, so I thought I'd make a pie that he could eat and not feel guilty about!
¼ cup unsweetened cocoa powder
1 cup whipped cream (I used Cool Whip Free)
3 tbsps of cold water
1 tsp vanilla extract
14 tsp artificial sweetener (I used Splenda)
1 tsp unflavored powder gelatin
1 store bought or homemade graham cracker pie crust
1. In a small saucepan, soften gelatin in cold water

I thought I would post recipes once in a while that were easy but could satisfy our craving for chocolate - this sounds pretty tasty.
13 ounces bitter or semisweet chocolate
2 tablespoons unsalted butter
2 large egg yolks
1 1/2 cups heavy cream
2 tablespoons superfine sugar
1 teaspoon vanilla extract
In a microwave safe bowl, combine the chopped chocolate and the butter. Heat in the microwave until melted, about 35 seconds depending on your microwave, and stir to melt completely.

Valentine's Day Chocolate Mousse (Gluten-Free)

Ingredients:
8 strawberries (optional)
CHOCOLATE HEARTS (recipe follows, optional)
1/3 cup sugar
3 tablespoons cornstarch
1 cup milk
½ cup water
4 egg yolks, beaten
1 ¾ cups HERSHEY’S Semi-Sweet Chocolate Chips or HERSHEY’S Milk Chocolate Chips
1 teaspoon vanilla extract
¾ cup whipping cream, whipped
½ cup whipping cream, whipped

Here is a cake I did last month. I have been slacking badly on this site, so I will be posting several today.
This cake was double chocolate with chocolate mousse between the layers, topped with a thin layer of buttercream and Marshmallow Fondant.

This is so good you have to try it! Nestle makes this Mousse and it comes in a powder form. All you do is add 2/3 cups of milk If I remember correctly (dont have the box next to me) and mix with a blender on high for about 4 minutes then chill for about 2 hours and vuola!

I think the last cake I posted was right around the end of May, which makes me sad because I have been doing SO much lately and just have not had the time to share any of my latest creations with you. So please forgive me, but I am about to dump about 5 posts in here right in a row.
The first one is a three-tiered wedding cake I made around the first week of June.

Wedding cake to resemble this Martha Stewart creation. The top and bottom tier are vanilla cake with strawberry filling and purple vanilla buttercream icing. The middle tier was devoted to the groom and is chocolate cake with chocolate mousse filling and purple white chocolate buttercream icing.
