I recently came across a delicious cilantro chutney product that I ended up going through much faster than any condiment I've ever owned. It may perhaps be the first since Grey Poupon that actually was used in its entirety prior to meeting the expiration date. I mixed it with rice, pasta, soups, etc.

I always like to have good tortillas on hand; with them I can turn virtually any combination of ingredients into a fun and easy meal.
Today I combined steamed zucchini, avocado, cherry tomatoes, hummus, and cilantro in side of an Ezekiel Sprouted Grain tortilla. I pictured it open-faced as well so you can get an idea of what was inside.

Ok Im usually pretty handy with a knife and my chopping skills are not bad. I recently bought fresh Itlain parsley and cilantro (:drool:). When I was making my dinner tonight I decided to add some of these to my pasta.

If you've never tried salmon with lime, you should! It's a great flavor pairing and one that I really enjoy. I used to have a recipe for Salmon with lemon and limes, but somehow, I seem to have lost the recipe.

made this delish moroccan chicken the other night. it was super easy and really flavorful. its just chicken stalk, diced tomatoes, onion, garlic, zucchini, garbanzo beans, cinnamon, cumin, salt, pepper, chili flakes and cilantro!

Serves: 2;
Ingredients:
Marinade
1 cup low-sodium soy sauce
1/2 cup honey
6 tbsp fish sauce (found in Asian markets)
2 tbsp fresh orange juice
1 tbsp cilantro
1 tbsp mint leaves
1 tbsp fresh lime juice
1 Thai (or serrano) chile
2 1/2 cloves garlic
1 1/2-inch piece ginger, peeled and sliced
Salad
6 oz flank steak
2 cups Asian vermicelli noodles
1/4 cup diced tomato
2 tbsp enoki mushrooms (found in Asian markets)
1/8 cup thinly sliced red onion
10-12 grapefruit segments
8 cilantro sprigs
4 mint sprigs
Dressing
1/4 cup fresh lime juice
1/4 cup soy sauce
2 tbsp fresh orange juice
2 tbsp dark sesame oil
2 1/4 tsp fish sauce
1 Thai (or serrano) chile, seeded and minced
1 1/2 cloves garlic
1 1-inch piece ginger, peeled and chopped
Directions:
Mix marinade ingredients in a blender until combined.

Ingrid Hoffman, the host of the Food Network's Simply Delicioso makes a scrumptious meal under 500 calories.
Ingredients:
3/4 c uncooked long-grain brown rice
4 Tbsp orange juice
2 Tbsp lime juice
2 Tbsp olive oil
4 Tbsp finely chopped cilantro
2 cloves garlic, minced
1 pinch (about 1/16 tsp) sugar
4 snapper fillets (5 oz each), rinsed and patted dry
1 3/4 c medium salsa
1 can (15 oz) no-salt-added black beans, drained and rinsed
2 c chopped pineapple
Directions:
Preheat oven to 400°F and cook rice according to package instructions.
