Yesterday, I had a crummy, stressful day at work. It was one of those days when the higher-ups are freaking out about an impossible deadline at the end of the week, getting everyone else all stirred up and anxious, only to find out later that the deadline is actually two weeks away. It was frustrating and tiring.

Pumkin Dessert Ravioli with Cinnamon Vanilla Sauce
3/4 cup Pumpkin
1 3/4 cups flour
2 teaspoons butter
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon sugar
8 ounces cream cheese
1 cup powdered sugar
1 teaspoon cinnamon
1/2 cup sugar
2 tablespoons cornstarch
2 cinnamon sticks
12 ounces evaporated milk
1 1/2 teaspoons vanilla
1. Mix first six ingredients together to form a soft dough.

This recipe, adapted from A Real American Breakfast by Cheryl Alters Jamison and Bill Jamison (William Morrow), will give you the energy to get through even the busiest morning. Providing an extra punch of protein (along with eggs) is lean machaca, a beef filling borrowed from Mexican ranchers.
Serves 6
Ingredients:
1 1/2 tablespoons vegetable oil
1/2 medium onion, chopped
1 red or green bell pepper, seeded, cored and chopped
1 1/2 lb thickly sliced lean deli roast beef, cut into matchsticks (or a 15-oz can black or pinto beans, drained, for machaca for a nonmeat protein)
3/4 cup lowfat, low-sodium chicken, beef or vegetable broth
2 cups bottled tomato salsa
1 cinnamon stick
1 large egg plus
1 large egg white, whisked lightly
6 thin flour tortillas, warmed
Directions:
To make machaca, heat oil in a skillet on medium heat.

These spices can be combined in amounts to make specific spice mixtures used in everyday cooking. A very well known spice mixture is the Garam Masala. The word garam means hot, not "hot" as in spicy chili hot, but due to the fact that the spices blended in the mixture are said to increase the body temperature.

Makes 4 servings
Prep Time: 25 min
Cook Time: 5 min
Ingredients
1/2 pound (2 cups) mix of fresh blueberries, sliced strawberries, raspberries or blackberries
2 tablespoon powdered sugar
1/3 cup fat free sweetened condensed milk
1 container (6 ounces) lowfat vanilla yogurt
1 small loaf (10 ounces) French bread
1 egg
1 egg white
1/3 cup lowfat milk
1 teaspoon granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
non-stick cooking spray
Place berries in a small bowl and sprinkle with powdered sugar. For the sauce, spoon about 1/4 of the berries, sweetened condensed milk and yogurt into a blender (or food processor) and puree until smooth; set aside.
Cut bread into twelve 1 1/2-inch pieces.

I got this recipe in my email this afternoon and I KNEW I had to make it just as soon as I had the chance, it sounded so good! Well, the chance just so happen came up tonight when my sister invited me over for dinner (I think she is feeling sorry for me since the husband is still out of town). Anyway, here's the basics:

Browned Butter Frosted Pumpkin Bars
Ingredients
1 1/2 cups all-purpose flour
1 1/4 cups granulated sugar
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground ginger
1 can (15 oz.) LIBBY'S 100% Pure Pumpkin
3/4 cup butter (we recommend LAND O LAKES® Butter), melted
3 large eggs
1/2 cup (1 Stick) butter (we recommend LAND O LAKES® Butter), melted
4 cups powdered sugar
1 teaspoon vanilla extract
1/4 cup milk or 1/3 cup milk
1 pinch ground cinnamon (optional)
Instructions
PREHEAT oven to 350° F.
FOR BARS:
COMBINE flour, sugar, baking powder, 2 teaspoons cinnamon, baking soda and ginger in large bowl. Stir in pumpkin, 3/4 cup butter and eggs; mix well.
