Oatmeal cookies... comfort food for me, but the recipes for the lighter versions are usually soooo dry! Here's a lightened up recipe (from my light cooking "Bible" from America's Test Kitchens.) I was able to take it even lower - without sacrificing taste or texture.

I had a slight money freak-out yesterday after paying $3.99/gallon for gas for the truck. I was going to make a huge batch of fried chicken (yum), but decided I didn't want to fork out any more money. So last night's menu was grilled ham & cheese and tomato soup.

Traditional Filipino Comfort Food
I've been feeling a bit under the weather (and it may have something to do with all the fun in the sun this past Memorial Day weekend...) so I made a traditional Filipino soup dish - I find it pretty simple and oh so GOOD when you need a little pick-me-up.
What you'll need:
(with help from Pinoy Mix)
1 whole chicken (cut into parts or choice cuts of breast, thighs or wings)
2 1/2 cups young papaya or chayote [I only used 1 chayote]
1/2 cup chilli pepper leaves
5 cups water [it depends on how much broth you want]
2 tablespoons ginger (chopped)
1/2 head garlic (minced)
1 medium onion (diced)
3 tablespoons oil
2 tablespoons patis/fish sauce
pinch of salt and pepper (to taste)

A SYDNEY couple has withdrawn their two children from a public primary school, claiming their 11-year-old son was bullied by Muslim students because he ate a salami sandwich during Ramadan.
Andrew Grigoriou said yesterday he complained to the school and to police after his son Antonios was chased and later assaulted by Muslim students after a confrontation over the contents of his lunch, The Daily Telegraphreports.
Antonios, a Year 5 student of Greek-Australian background at Punchbowl Public School in Sydney's southwest, said he and a friend had to be locked inside the library for an hour after being chased by a group of Muslim boys offended by his choice of food while they were fasting.

When I saw this, i thought it was very interesting... fruit soup? But when I looked at the pictures and read the recipe, it sounded soooo good for when you are staying indoors, reading a book, in a cold rainy and wintery weather :).

Maybe I'm being irrational, but I'd like to submit for everyone a problem I have with my boyfriend. I don't need to, but I'll start by saying he's a great guy... tells me every day he loves me, is always very respectful and appreciative for the things I do for him. However, we are at different levels of comfort with roommate situations.

I love soup. Like, really really love it. I could eat it for every meal, every day of the week. And any kind of soup too--I don't think I've met a soup I didn't like. (Well, maybe if it was made with beets. But you never know!) The problem is I'm always so busy I never have a chance to cook for myself. I often find myself turning to canned chicken noodle soup from Cambells. Without a doubt, that's my comfort food and I'll never tire of it, but it's so much more fun to make your own! So I've decided to challenge myself. Each week I will make a new soup. I have tons of cookbooks to scour, so finding recipes shouldn't be a problem. I'll post my adventures here, and hopefully I'll inspire someone else!
(FYI: I started this little project during the first few days of October, so these first few posts will be catch-up. Plus, I didn't think to take pictures until recently, so for now most will be picture-less.)
