I once read a tip in Cooks Illustrated but for the life of me can't remember the tip or find the magazine! I want my french bread to be crispy again! Any ideas?

I got this recipe from "Cook's Illustrated" magazine's "The Best Light Recipes cookbook".
I absolutely love the taste of cheesecake, but not the hips, butt, and stomach that appears after the indulgences. This recipe manages to keep all the best things about cheesecake and take out the worst part: the high fat content.
