I was in the mood for something different last night, so I set out to create my own version of a corn chowder. I like my chowders fairly hearty and thick. Don't be discouraged by the list of ingredients.

CORN AND CHICKEN CHOWDER
14-oz can cream-style corn, low sodium preferred
1 cup fresh or frozen no-salt-added whole kernel corn
1 cup fat-free milk
5-oz can all-white chicken packed in water, drained
2 tablespoons minced red pepper
1 green onion, green part only, sliced
1/2 teaspoons fresh thyme, or 1/4 teaspoon dried thyme, crumbled
1/8 teaspoon white pepper
Side salad, for serving
In a medium saucepan, combine both corns, milk, and chicken. Heat over low heat for 5 minutes, stirring occasionally.
Stir in remaining ingredients.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)

Appetizers
Marinate mixed olives (jar) with freshly grated peel and juice from 1 lemon in refrigerator at least 24 hours.
